CREAMY BROWN RICE PUDDING
This version of rice pudding uses brown rice, cinnamon, and almond extract to make a slightly nutty comfort dessert. My mother adds raisins during the last 15 minutes; she calls this 'Speckled Pup,' but I prefer my rice pudding without raisins.

Steps:
- Bring water to a boil in a heavy medium saucepan. Add rice and 1/4 teaspoon salt, then reduce heat to low and simmer, uncovered, until rice is tender, about 40 minutes. Drain in a sieve.
- Heat butter in a large heavy skillet over medium heat until foam subsides. Add nuts and cook, stirring, until butter and nuts are golden brown, about 4 minutes.
- Add rice and nutmeg to skillet and toss to coat.
Tips:
- Choose the right kind of brown rice: short grain rice will produce a chewier result, while long grain rice will be more tender.
- Be sure to rinse the rice thoroughly before cooking, to remove any excess starch and help it cook more evenly.
- Don't skip toasting the rice before cooking: this step helps to bring out its nutty flavor and aroma.
- Use a ratio of 1 cup rice to 2 cups water or broth. This will ensure that the rice cooks evenly and doesn't become too mushy.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45 minutes, or until the rice is tender and all the liquid has been absorbed.
- When making the cinnamon sugar mixture, be sure to use ground cinnamon, not cinnamon sticks. The sticks will not dissolve and will be difficult to remove from the rice.
- Serve the rice immediately or store in an airtight container in the refrigerator for up to 3 days.
Conclusion:
This cinnamon brown rice is an easy and delicious side dish that can be enjoyed with a variety of main courses. The cinnamon sugar mixture adds a unique and flavorful touch that makes this rice stand out from the ordinary. Whether you're serving it for breakfast, lunch, or dinner, this cinnamon brown rice is sure to be a hit.
