1 cup uncooked rice
2 cups water
2 tablespoons nonfat milk
5 tablespoons raisins
2 teaspoons margarine
½ teaspoon ground cinnamon
1 teaspoon sugar

Steps:

Steps:

4 tablespoons butter
1/4 teaspoon curry powder
1 medium onion, chopped
1/2 cup raisins
1/2 teaspoon cinnamon
1 pinch ground cloves
1 cup short-grain rice
2 cups chicken broth
1/4 cup slivered almonds, toasted

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter in a saucepan that is oven-proof or a 1 1/2 casserole pan add onions and raisins; cook stirring constantly until onion is softened and lightly colored.
  • Add broth and bring to a boil. Add rice and spices and cover.
  • Transfer to oven and bake for 50-60 minutes or until liquid is absorbed and rice is tender.
  • Remove from oven; stir in nuts and serve.

3/4 c onion, diced
2 clove garlic, minced
1 Tbsp butter, unsalted
1 c brown rice, raw
1/2 c craisins
2 1/2 c chicken stock (broth is okay, also)
1 1/2 tsp cinnamon, powdered
2 Tbsp cilantro, fresh; chopped

Steps:

  • 1. Cook the onion and garlic in a large sauce pan with the margarine until tender; stir in rice and brown lightly.
  • 2. Stir in remaining ingredients, except cilantro.
  • 3. Heat to boiling, stirring once or twice; reduce heat, cover and simmer until rice is tender and stock has been absorbed; approximately 40 to 45 minutes.
  • 4. Remove from heat; fluff rice lightly with fork; cover and let sit for about 8 minutes.
  • 5. Garnish with cilantro.
