2 1/4 cups oat bran
1/4 cup brown sugar
1 1/4 teaspoons cinnamon
1 tablespoon baking powder
1/4 cup raisins
1/2 cup skim milk
3/4 cup frozen apple juice concentrate
2 egg whites
2 tablespoons canola oil
1 medium apple, cored and chopped

Steps:

  • Mix dry ingredients in a large bowl.
  • Mix the milk, apple-juice concentrate, egg whites, and oil in a bowl or blender.
  • Add to the dry ingredients and mix.
  • Add the chopped apple and walnuts.
  • Spray muffin pan with Pam spray and fill with batter.
  • Bake in 425 F.
  • oven for 17 minutes.
  • Makes 12 muffins.
  • After cooking, store in large plastic bag to retain moisture and softness.
  • Great served with applesauce or apple butter.

1 1/2 cups whole wheat flour
3/4 cup flax seed meal
3/4 cup oat bran
1 cup honey, warmed to liquid state or 1 cup agave nectar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
2 large overripe bananas, mashed
2 small honey crisp apples, grated, NOT drained
1/2 cup golden raisins or 1/2 cup any other dried fruit
1 cup nuts, chopped (optional)
3/4 cup milk
2 eggs, beaten
1 teaspoon vanilla

Steps:

  • Preheat oven to 350.
  • Mix together flour, flax, oat bran, brown sugar (if using), baking soda, baking powder, salt and cinnamon in a large bowl.
  • Stir in apples, bananas, raisins and nuts (if desired).
  • Combine honey/agave (if using) milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients and stir until just moistened. DO NOT OVER MIX.

2 ½ cups all-purpose flour
1 cup brown sugar
2 tablespoons baking powder
1 ½ teaspoons ground cinnamon
3 cups buttermilk
½ cup butter, melted
2 teaspoons vanilla extract
1 (10 ounce) package cinnamon chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
