1 cup confectioners' sugar
4-1/2 teaspoons milk
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine flour, baking powder, sugar, cinnamon and salt. Cut in shortening until mixture resembles coarse crumbs. I loved the warm tender biscuits with cinnamon swirlled in it and the sweet icing melting down. Having moved to California 12 years ago, I have really missed these as there are no Hardee's out here. I've found a copy cat recipe for it and I'm on cloud 9!! The person who posted this on another site said she use to work at Hardee's so this is the real-deal ! I can't wait to make these for my husband and kids!

4 cups self-rising flour
3/4 cup shortening
2 cups milk or 2 cups buttermilk
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
1/3 cup granulated sugar
3 teaspoons cinnamon
1 cup raisins

Steps:

  • Mix flour, baking powder, salt, baking soda and sugar.
  • Blend in shortening with a fork until mixture is fine.
  • Add milk and stir until just mixed. Only add enough milk to form dough. Add raisins and mix.
  • Add cinnamon and mix until swirled through batter. Do not mix batter any more than you have to.
  • Scrape batter onto well-floured surface. Flour top and pat down with hands until 1/2-inch thick.
  • Cut with 2-inch cutter and place on greased baking pan.
  • Bake at 400°F for 10-15 minutes until golden brown.

¼ cup white sugar

¾ cup confectioners' sugar
2 tablespoons milk, or more as needed

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Add oil to a skillet and place in the oven to heat.
  • Combine baking mix, sugar, cinnamon, and raisins in a medium-sized bowl and mix well. Cut in shortening using a fork until crumbly. Add milk until a soft dough form and mixture pulls away from the sides of the bowl.

  • Preheat oven to 425 degrees F (220 degrees C).

This recipe was in the Southern Living Magazine and it looked very easy. It uses frozen biscuits that are defrosted to make the dough. Be sure to check out the cinnamon-raisin roll version posted at the end of this recipe.

1 (26 1/2 ounce) package frozen biscuit dough
1 (6 ounce) package dried apricots
1/4 cup butter, softened
3/4 cup brown sugar, firmly packed
1 teaspoon ground cinnamon
1/2 cup pecans, toasted and chopped
1 cup powdered sugar
3 tablespoons milk
1/2 teaspoon vanilla extract

Steps:

  • Arrange frozen biscuits, with sides touching, in 3 rows of 4 biscuits on a lightly floured surface.
  • Let stand 30 to 45 minutes or until biscuits are thawed but still cool to the touch.
  • Pour boiling water to cover over dried apricots, and let stand 10 minutes; drain well.
  • Chop apricots.
  • Sprinkle thawed biscuits lightly with flour.
  • Press biscuit edges together and pat to form a 10 x 12 inch rectangle of dough; spread evenly with softened butter.
  • Stir together brown sugar and cinnamon; sprinkle evenly over butter.
  • Sprinkle chopped apricots and pecans evenly over brown sugar mixture.
  • Roll up, starting at one long end; cut into 12 (about 1 inch think) slices.
  • Place rolls into a lightly greased 10 inch cast iron skillet or a 10 inch round Pan or a 9 inch square pan.
  • Bake at 375F for 35 to 40 minutes or until center rolls are golden and done.
  • Stir together 1 cup powdered sugar, 3 Tablespoons milk, and 1/2 teaspoon vanilla; drizzle evenly over rolls.
  • Cinnamon-Raisin Rolls: Prepare Apricot-Pecan Cinnamon Rolls as directed, substituting 1 cup golden raisins for 1 (6 oz) package dried apricots.

I had these for the first time at my sister-in-law's when I was staying with them as a teen. They are now a much loved tradition in my home too. Any time it snows, the kids beg me to make them. I've changed them just a bit by adding the nuts but they are good with or without them. For an Orange Cinnamon variation see recipe #112535.

2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup shortening
3/4 cup milk
1 teaspoon vanilla extract
1/4 cup butter, melted (or very soft)
1/2 cup sugar
1 teaspoon cinnamon
chopped pecans (optional)
1 cup powdered sugar
1 -2 tablespoon milk
1/4 teaspoon vanilla

Steps:

  • Combine flour, baking powder and salt; cut in shortening.
  • Add milk and 1 tsp. vanilla; stir with fork just until dough leaves sides of bowl.
  • Roll dough out, on lightly floured surface, into a 1/4 inch thick rectangle.
  • Brush top with butter (I prefer to use soft butter rather than melted).
  • Combine cinnamon and sugar; sprinkle evenly over dough.
  • Sprinkle with chopped pecans (or other nuts or raisins) if desired.
  • Roll up, starting on long side.
  • Cut into 1/2 inch thick rounds.
  • Place rounds, with sides just touching, in greased 9" round pan.
  • Bake at 425°F for 18-20 minutes or until golden brown.
  • Remove from oven and drizzle with glaze, serve warm.
  • For glaze: Combine all ingredients and beat until smooth.

CINNAMON BUTTER
3 c sugar
2 stick unsalted butter, room temp
4 Tbsp cinnamon
BISCUITS
2 2/3 c Jiffy or Bisquick baking mix with 2/3 cup of milk
1 Tbsp cinnamon
2/3 c sugar
1 egg
GLAZE
3 c powdered sugar
1 tsp vanilla extract
1/3 c milk or French vanilla liquid coffee creamer

Steps:

  • 1. First, make the cinnamon butter. It will have the consistency of wet sand (if not, add a bit more sugar). Put into a Ziploc bag and refrigerate until very firm (at least 2 hours).
  • 2. Break into clumps while in the bag to the size you prefer. I've found about M&M size is the best. There will be extra, so keep in the fridge for use next time!
  • 3. In a large bowl, add the baking mix, cinnamon, sugar, and egg to make the biscuit mixture. Mix together.
  • 4. Once smooth, add at least 4 heaping tablespoons of cinnamon butter crumbles on top of dough. Gently fold in as not to break up too many of the clumps. Some of the mix looks like sand and that's ok! Don't overmix.
  • 5. Drop heaping spoonfuls onto greased cookie sheet or baking stone. (I use tablespoons from my silverware drawer). Keep them about 2-3 inches apart...they should be a little bit bigger than golf ball size.
  • 6. Bake in a 400-degree oven for 12-15 minutes, until lightly browned and firm to touch in the center.
  • 7. To make the glaze, combine the powdered sugar, vanilla extract, and milk until smooth.
  • 8. Let stand on cookie sheet about 10 minutes and spoon on the glaze.
  • 9. Go back in another 5 minutes and add another bunch of glaze.
  • 10. I sometimes prefer to use cream cheese ready-made frosting from a can. Just put some into a Ziploc bag (like a decorating bag, snip off the corner) and drizzle on biscuits. Enjoy!

  • In a large bowl, combine the flour, baking powder, salt and baking soda. Combine the buttermilk, oil and vanilla; stir into dry ingredients just until moistened (dough will be sticky)., Turn onto a well-floured surface; knead 8-10 times. Roll out dough into a 15x9-in. rectangle. Spread butter to within 1/2 in. of edges. Combine the sugar, cinnamon, cardamom and pecans if desired; sprinkle over butter. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 1-1/2-in. slices., Place 1 in. apart on a parchment paper-lined baking sheet. Bake at 400° for 20-25 minutes until lightly browned., Meanwhile, in small bowl, combine the confectioners' sugar, vanilla and enough milk to achieve a drizzling consistency. Drizzle over warm biscuits. Serve immediately.
