4 medium-ripe bananas (the peel should be pretty black), peeled and halved

2 tablespoons lightly-packed light brown sugar
1 large egg, beaten
3 ounces semisweet chocolate, finely chopped

Steps:

  • Make the banana bread: Adjust an oven rack to the lowest position and preheat the oven to 350 degrees F. Grease a 9-inch loaf pan with the softened butter.   • Make the caramel sauce: In a small saucepan over medium heat, combine the butter, brown sugar, salt, vanilla, and honey. Keep stirring to prevent the sugar from sticking to the pan. Bring to a gentle boil, then remove the pan from the heat.

  • Peel the bananas, cutting out any of the bruised or brown spots on the banana themselves. Place them in a large bowl. Take a potato masher and mash the bananas until very well mushed. DRY INGREDIENTS
2 1/2 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 Tbsp ground cinnamon
WET INGREDIENTS
1 stick butter or margarine
2 large eggs
1 1/2 c granulated sugar
1/2 c firmly packed, light brown sugar
3 to 4 medium very ripe bananas mashed
2 tsp vanilla extract
1 c walnuts or pecans *optional
1 c quick cook oatmeal
1 1/2 c water, boiling

Steps:

  • 1. Preheat Oven to 350 degrees Fahrenheit. Grease and Flour 2 (9-inch x 5-inch) loaf pans.
  • 2. Take 1 Cup Walnuts or Pecan halves and coarsely chop and put in small bowl/dish. *Can reduce to 1/2 or omit altogether if you are allergic to nuts or do not like nuts. Can also substitute with Chocolate Chips if desired.
  • 3. Place 1 cup quick-cooking oatmeal in heatproof bowl. Then pour 1 1/2 cups water into a small sauce pan and bring to a full boil for about 1 minute. Turn stove off and carefully pour boiling water over Oatmeal. Stir well with fork and let stand until cool.
  • 4. In a medium mixing bowl, combine by hand or by sifting: all purpose flour, Baking Powder, Baking Soda, salt, and cinnamon until well blended.
  • 5. In a Large mixing bowl using an electric mixer beat: softened butter, eggs, granulated sugar, light brown sugar and vanilla extract together until light and fluffy.
  • 6. Next combine flour mixture to butter and egg mixture 1/2 cup at a time using electric mixture on low speed and mixing each 1/2 cup addition until well blended before adding the next 1/2 cup. Continue to add flour mixture to butter,egg and sugar mixture until all of the flour mixture has been added. Making sure to use a spatula to scrape dough off sides of bowl between each 1/2 cup addition so as to make sure mixture is mixed together completely. *** WARNING - Mixture will be thick.***
  • 7. Once flour and butter mixtures have been combined thoroughly. Add oatmeal (boiling water should have been completely absorbed) to batter making sure to mix together thoroughly.
  • 8. Then using spatula add and fold in mashed over ripe bananas and Walnuts or Pecans. Mixture will have become wetter but should not be soupy. You should be able to easily stir the mixture but should be thick like a brownie or muffin mix.
  • 9. Pour batter into loaf pan until half filled and if there is extra batter pour remaining batter into a second greased and floured 9 x 5 loaf pan or you can pour them into prepared muffin pan. Bake for 1 hour or until toothpick inserted in center of loaf comes out clean.
  • 10. Once Baked take out of oven and cool 15 minutes on cooling rack before removing from loaf pan.

3 very ripe bananas, peeled and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces
1 disk Mexican chocolate, chopped into small pieces

Steps:

  • For the banana bread: Preheat the oven to 350 degrees F. Line a 12-count muffin tin with cupcake liners.
  • Sift the flour, baking soda and salt into a medium bowl. Whisk the vanilla and eggs together in a liquid measuring cup with a spout. Set aside.
  • In a stand mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the sugar and butter until light and fluffy.   • In a medium bowl combine mashed bananas, brown sugar, milk, egg whites, and oil. Add banana mixture all at once to flour mixture; stir just until moistened (batter should be lumpy). If desired, fold in 2 tablespoons of the walnuts. Spoon batter into prepared loaf pan. If desired, sprinkle with the remaining 2 tablespoons walnuts.
  • Bake for 45 to 50 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove bread from pan. Cool on wire rack. Wrap and store overnight before slicing.

3 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
3 tablespoons ground cinnamon
1 cup nuts
3 eggs, beaten
1 1/2 cups vegetable oil
2 cups bananas, mashed
2 teaspoons vanilla extract

Steps:

  • Combine dry ingredients in large bowl.
  • Add nuts.
  • In another bowl, combine eggs and oil
  • Mash bananas and add to eggs mixture.
  • Add vanilla, mix well.
  • Add wet ingredients to dry ingredients, stir until moistened.
  • Pour batter into 2 greased and floured loaf pans.
  • Bake at 350 degrees for 1 hour and 5 minutes, or until done.
  • Cool 10 minutes before removing from pans.
  • Remove to wire racks, cool completely.

1 loaf (1 lb) cinnamon-swirl bread, cut into 1-inch cubes

3/4 cup chopped pecans
1/2 cup packed brown sugar
1/4 cup butter
1/2 cup whipping cream
2 tablespoons dark rum

Steps:

  • Heat oven to 350°F. Spray 2 1/2-quart casserole with cooking spray.
  • In large bowl, slightly beat eggs with whisk; beat in granulated sugar and half-and-half. Stir in bread cubes, bananas and pecans. Pour mixture into casserole. Let stand 10 minutes.
  • Bake uncovered 1 hour 20 minutes or until center is set. Let stand 10 minutes.
  • Meanwhile, in 1-quart saucepan, heat brown sugar and butter over medium heat, stirring until melted. Stir in whipping cream and rum with whisk; cook 3 minutes or until thick and reduced to 3/4 cup. Serve warm bread pudding with warm sauce.

1/2 cup butter, softened
2 eggs
2 bananas, very ripe & mashed

1/2 teaspoon cinnamon
1 cup chopped pecans (optional)
1 cup semi-sweet chocolate chips (optional)
1/4 cup sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Mix 1/4 cup sugar and 1 t cinnamon together.
  • Grease a loaf pan.
  • Dust greased pan with cinnamon sugar mixture. Save extra mixture for top of batter.
  • Cream together 1 cup sugar and butter. Add eggs, one at a time, until combined.
  • Add bananas, vanilla and buttermilk until combined.
  • In a seperate bowl sift dry ingredients together.
  • Add dry ingredients into banana mixture.
  • Stir just to combine. Don't overmix.
  • Fold in pecans and chocolate chips if using.
  • Pour batter into prepared pan.
  • Sprinkle with 1-2 tablespoons of remaining cinnamon sugar mixture.
  • Bake for 50-60 minutes.
  • Let cool in pan 5 minutes.

1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar
7 very ripe bananas, mashed
2 teaspoons vanilla extract
4 eggs
3 cups flour
1/2 teaspoon salt

1 1/2 tablespoons cinnamon (approximate)
3 tablespoons sugar (for sprinkling)

Steps:

  • Grease and flour two 9x5 loaf pans. Set aside.
  • Mash bananas with vanilla in a medium bowl. Set aside.
  • Combine flour, salt, and baking soda in another medium bowl. Set aside.
  • Cream the butter and sugars. Beat on high 3-5 minutes, until very light and fluffy.
  • Add one egg at a time, beating thoroughly after each addition.
