- On a box grater, coarsely shred the onion and potato. Transfer to a colander or wrap in a cheesecloth sling, and squeeze as dry as possible. Let stand for 2 minutes, then squeeze dry again. - In a large cast-iron skillet, heat 2 tablespoons oil until shimmering. Drop heaping tablespoons of the potatoes into the skillet and flatten them with the back of the spoon. - Peel/slice/core apples. I use my peeler/slicer/corer device. Put apples in bowl, sprinkle lemon juice and fruit fresh.
- Repeat process, till apples are finished peeled and cut up.
- Place some in blender, alittle of the water, some of the cinnamon imperial candies and 2 tbs lemon juice.
- Blend at one of the higher speeds, till blended.
- Pour in crock pot or dutch oven.
- Note: I make several different batches at once. One in the dutch oven on medium-high heat and the other in the crock pot. Cook till hot.
- Repeat process till apples, water, cinnamon candies have been blended.
- Pour in crock pot or dutch oven, add 1 cup sugar.
- Meanwhile while applesauce is cooking, wash canning jars, lids, and bands. Sterilize in hot water.
- Take out a few jars at a time, pour in applesauce, put lids and bands on. Put in hot water bath for 25 minutes.

- 1. In a medium mixing bowl, combine cinnamon and cloves. Add the applesauce, essential oil, and glue.
- 2. Knead in bowl for a few minutes, until you have a firm, pliable dough. Add more cinnamon if the dough is too wet, more applesauce if it's too dry.
- 3. Dust your work surface with cinnamon (just as you would with flour for regular cookies). Roll the dough to 1/4 inch thickness. Cut out shapes with cookie cutters, or press into a cookie mold. For molds, press dough into mold, smooth with rolling pin, remove, and cut away extra dough.
- 4. While still moist, cut a hole in the top of each ornament with the end of a straw for hanging. Place ornaments on paper towels and air dry for several days. Carefully flip them several times while drying so they won't bend or warp.
- 5. In a hurry? Instead of air drying, bake ornaments at 200 degrees F for about 3 hours, turning occasionally. Decorate!
