2-1/2 cups old-fashioned oats
1/2 cup oat bran
1/2 cup sliced almonds
1/3 cup thawed apple juice concentrate
1/3 cup canola oil
1/3 cup honey
1 cup puffed rice cereal
1 cup dried apples, chopped
1/2 cup toasted wheat germ
1-1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup raisins

Steps:

  • In a large bowl, combine the oats, oat bran, and almonds; set aside. In a small saucepan, combine the concentrate, oil and honey. Cook and stir over medium heat for 2-3 minutes or until heated through. Remove from the heat; stir in the cereal, apples, wheat germ, cinnamon and nutmeg. Pour over oat mixture and toss to coat., Transfer to two greased 15x10x1-in. baking pans. Bake at 300° for 30-35 minutes or until golden brown, stirring every 15 minutes. Cool on wire racks. Stir in raisins. Store in an airtight container.

2 cups rolled oats
2 medium apples, chopped
1/2 cup sugar (raw turbinado if you have it)
1/2 cup honey
1/4 cup oil
1 teaspoon nutmeg
2 1/2 teaspoons cinnamon

Steps:

  • Heat oven to 350*.
  • Line a 8x10 pan with aluminum foil and lightly oil.
  • In a large bowl, mix all ingredients thoroughly.
  • The oats should be slightly sticky and clumpy. If not, add more honey.
  • Evenly spread oat mixture on pan.
  • Bake 20 minutes, stirring every 5 minutes.
  • If you like crunchier granola, cook an extra 5 minutes.

I love baking and experimenting with recipes. A couple of nights ago I had purchased some granola on sale at the store and wondered if I could substitute it for oatmeal. After viewing several recipes for oatmeal cookies, I decided just to put together something myself. The result? Well, lets just say my husband LOVES them!

Number Of Ingredients 10

3/4 cup applesauce
3 tablespoons butter
1/2 cup brown sugar (packed)
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1 egg
1 1/4 cups flour
1 1/4 cups granola cereal
1/8 cup sliced almonds (optional)

Steps:

  • In a microwavable bowl measure out the applesauce and add butter in slices. Microwave this for about 1 minute. If butter isn't completely melted give it another minute.
  • Stir in the brown sugar 1/4 cup at a time. Stir until Smooth.
  • Add cinnamon, baking soda and vanilla.
  • Beat in the egg.
  • Slowly add flour, continuing to mix until smooth again.
  • Fold in granola (and almonds).
  • Spoon drop batter onto lightly greased baking sheet, about 1 inch apart (cookies will puff but shouldn't spread outward).
  • Bake at 350°F for 12-15 minutes - until lightly golden and firm.
  • Allow them to cool on a wire rack about a minute or 2.
