Time 40m

Yield Makes 20

Number Of Ingredients 8

4g fast-action dried yeast
250g strong white bread flour, plus extra for dusting
25g caster sugar
125g evaporated milk
1 medium egg
25g unsalted butter, melted
1.5l rapeseed or vegetable oil, for the bowl and deep-frying
icing sugar, for dusting

Steps:

  • Mix together the yeast, flour, sugar and 1 tsp sea salt in the bowl of a stand mixer. Whisk together the evaporated milk and egg and tip into the bowl with the melted butter and 60ml just-boiled water. Knead on a medium speed for 2 mins in the stand mixer, or for 5 mins on a lightly floured work surface, until smooth. Shape the dough into a ball and put in a large, lightly oiled bowl. Cover with a damp tea towel and chill for 8-24 hrs.
  • Roll out the dough on a lightly floured work surface into a roughly 20 x 25cm rectangle about 1cm thick. Cut into 20 x 5cm squares.
  • Pour the oil into a deep stock pot or saucepan, so it is no deeper than one-third full. Or, use a deep-fat fryer. Heat the oil to 175C. Line a baking tray with kitchen paper. Fry the beignets in batches for 3 mins, turning occasionally with tongs, until puffed up and golden brown. Lift the beignets onto the paper to drain, then move to a wire rack, dust generously with icing sugar and serve warm.

CINNAMON AND SUGAR BEIGNETS

Cinnamon and Sugar Beignets image

I found this recipe in "Out to Brunch - At Mildred Pierce Restaurant" Beignets are a french doughnut without the holes. These are best served while still warm.

Provided by diner524

Time 5h25m

Yield 12 beignets, 4-6 serving(s)

Number Of Ingredients 12

1 cup white sugar
1 teaspoon ground cinnamon
1/2 cup warm water
2 tablespoons yeast
2 tablespoons white sugar
1/4 cup unsalted butter, soft
2 teaspoons ground cinnamon
2 eggs, large
1 egg yolk, from large egg
1/2 teaspoon salt
1 2/3 cups all-purpose flour
vegetable oil, for deep-frying

Steps:

  • In a bowl, combine the warm water, yeast and 1 teaspoons of the sugar. Set in a warm place for 10 minutes.
  • In a large bowl, cream together the butter, remaining white sugar and the cinnamon. Add the eggs and yolk one at a time, beating well with a wooden spoon after each addition. Beat in the yeast mixture, salt and flour until smooth.
  • Cover the bowl with plastic wrap and place in a warm spot until the dough has doubled in size, about 2 hours. Punch down the dough in the bowl, cover again and refrigerate for 3 hours or overnight.
  • Heat the oil to 325 F (160 C). Meanwhile, turn dough out onto a lightly floured surface and press to a 1" thickness. Using a 2" cookie cutter dipped into flour, stamp out the beignets. Press scraps together and pat into a 1" thickness. Cut out the remaining beignets.
  • Fry beignets, 4 at a time, turning occasionally until they're evenly browned (about 5 mins). With the slotted spoon, carefully scoop them out and place on a paper towel to absorb any excess oil. Roll the beignets in the Cinnamon Sugar while they're still warm.
  • Note: Also good rolling them in powdered/confectioners sugar.

Tips:

  • Use fresh yeast for the best results. If you're using active dry yeast, proof it in warm water with a little sugar before adding it to the dough.
  • Don't overwork the dough. Mix it just until it comes together in a ball.
  • Let the dough rise in a warm place until it's doubled in size. This will take about an hour.
  • When frying the beignets, maintain the oil temperature between 350°F and 375°F. Use a thermometer to monitor the temperature.
  • Fry the beignets in batches, and don't overcrowd the pan. This will help them cook evenly.
  • Serve the beignets hot, dusted with powdered sugar or cinnamon sugar.

Conclusion:

Cinnamon and sugar beignets are a delicious and easy-to-make treat. With their light and fluffy dough and sweet, crispy coating, they're sure to be a hit with everyone. These beignets are perfect for breakfast, brunch, or dessert. But no matter when you serve them, they're sure to be a hit!
