2 cups white sugar
⅔ cup evaporated milk
1 ¼ cups miniature marshmallows
½ cup butter
1 dash salt
1 ¼ cups cherry baking chips
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
¾ cup chunky peanut butter

Steps:

  • In a large saucepan over medium heat, stir together sugar, milk, marshmallows, butter, and salt. Simmer for about 5 minutes or until mixture reaches soft ball stage, 240 degrees F (115 degrees C). Turn off heat. Add cherry chips and vanilla; stir until melted.
  • Pour mixture into a well-greased 9x13 inch pan, and let cool until firm.
  • In a microwave, or in a saucepan over low heat, melt chocolate chips and peanut butter. Pour over cherry mixture and spread evenly. Allow to cool completely before cutting.

Absolutely delicious Old Fashioned Cherry Mash Chocolates. A perfect and special treat for the cherry lover in your life. Great for Christmas or Valentine's Day gifts.

6 squares of chocolate Almond Bark
½ heaping cup crushed cocktail peanuts
2 Tbsp peanut butter
¼ cup butter, softened
1¾ cup powdered sugar
⅓ cup finely chopped maraschino cherries, patted dry as possible with a paper towel
2-3 tsp of maraschino cherry juice, only if absolutely needed
24 mini muffin paper liners

Steps:

  • First, line the mini muffin pan with paper liners. Set aside.
  • Then, line a cookie sheet with wax paper. Set aside.
  • Next, in a small bowl, combine softened butter and powdered sugar. Using a hand mixer, beat until it starts to stick together. It will be clumpy.
  • Add patted-dried, chopped maraschino cherries. Mix well. IF the mixture is still clumpy after adding the chopped cherries, add a half tsp of maraschino cherry juice and mix again. If needed, add another half teaspoon and so on. You do not want this to be the consistency of frosting. You want to keep it as thick as possible.
  • Using a tablespoon-size cookie scoop or small spoon, scoop cherry mixture onto lined cookie sheet an inch apart. Place in freezer for at least one hour.
  • Next, while cherry drops are freezing, follow the instructions on the package to melt Almond Bark in a microwave-safe bowl. Once melted, add crushed peanuts and peanut butter. Mix well.
  • Then, drop a small amount of the Almond Bark mixture into the bottom of each liner, just enough to cover the bottom of the liner.
  • Take cherry drops out of the freezer and break each one in half. (You only want the cherry centers to be about ½ Tbsp). Form the halved drops into a circular disk and place one on top of each Almond Bark mixture already in the pan.
  • Afterward, top each cherry drop with a spoonful of the Almond Bark mixture.
  • Allow to cool completely and set up before eating.
  • Can be stored at room temperature for up to 10 days.

These taste like the real thing for those of us who don't have access to St. Joseph, MO's famous yummy candies. Rich cherry nougat surrounded by chocolate and chopped peanuts.

1/2 stick margarine
1/2 tsp vanilla
1 lb confectioners' sugar
1 box vanilla frosting mix (dry)
1 pkg cherry jello (small size, dry mix)
8 oz maraschino cherries, drained, dried, chopped in blender
1/2 can(s) sweetened condensed milk
10 oz unsalted peanuts, crushed
18 oz chocolate chips, either milk chocolate or semi-sweet
1/2 oz paraffin (1/8 of a bar)

Steps:

  • 1. Mix all ingredients with mixer til well-blended. Roll into desired size balls. I suggest small ones since this is a very rich candy and the chocolate coat will add some size, also. Chill thoroughly
  • 2. Melt chocolate chips with parafin. Stir til well-blended. Mix in peanuts.
  • 3. Dip chilled cherry balls into mixture, reheating chocolate if it begins to harden. Chill thoroughly til set. Enjoy!

This recipe makes delicious little fudge squares that would be excellent on a holiday cookie tray. They are SWEET but really flavorful. Perfect as small squares. If you like Chocolate and Cherries this recipe is for you. The candy bar was originally called Cherry Chase, and then Cherry Chaser, before becoming known as Cherry Mash. It can be found throughout the Midwest in most grocery and convenience stores and mass-merchandise outlets. I made them with pecans b/c I did not have peanuts and they were still delicious. I found the cherry chips at our Super Walmart next to the chocolate chips.

2 tablespoons butter (I used butter) or 2 tablespoons margarine (I used butter)
1/4 teaspoon salt
1/3 cup half-and-half (I used 1/2 and 1/2 mixed with whole milk) or 1/3 cup undiluted evaporated milk (I used 1/2 and 1/2 mixed with whole milk)
1 cup miniature marshmallow
1 cup cherry chips
1 cup chocolate chips (I used Ghirardelli Bittersweet Chocolate about 3 1/2 ounces) or 4 ounces bittersweet chocolate (I used Ghirardelli Bittersweet Chocolate about 3 1/2 ounces)
1/2 cup peanut butter
1 cup salted peanuts

Steps:

  • Combine sugar, butter or margarine, salt and half and half in saucepan. Boil on high heat for about 5 minutes, stirring occasionally. Stir in marshmallows and cherry chips.
  • Spread in 8 or 9" square pan which has been lined with parchment or wax paper.
  • Melt chocolate with peanut butter in a small pan over low heat, stirring occasionally.
  • Stir in peanuts. Spread evenly over cherry layer.
