2 tablespoons coarse black pepper
2 teaspoons garlic powder
2 teaspoons onion salt
½ cup margarita mix
¼ cup lime juice

2 tablespoons honey
1 cup light olive oil
6 skinless, boneless chicken breast halves

Steps:

  • Place cilantro, pepper, garlic powder, and onion salt in the bowl of a blender. Pour in margarita mix, lime juice, orange juice, tequila, triple sec, and honey. 1/4 cup smoked sea salt, such as Maldon, or regular sea salt
1 teaspoon chile-lime seasoning, such as Tajin (see Cook's Note)
1 lime, juiced
1/2 cup cilantro leaves
1/2 Fresno, jalapeno or serrano chile, chopped
1/2 ounce Simple Syrup, recipe follows
1 ounce orange-flavored liqueur, such as Cointreau
2 ounces good tequila
Ice
Lime soda, for serving
1 cup sugar
1 cup water

Steps:

  • Combine the smoked salt and chile-lime seasoning on a saucer.
  • Rub the rim of a cocktail glass with the lime and dip the glass into the mixture on the saucer.
  • In a cocktail shaker, muddle the cilantro leaves with the chile, lime juice and simple syrup. Add the orange-flavored liqueur and tequila and shake with ice for 20 seconds.
  • Strain into the prepared glass with fresh ice and garnish with the top of the chile. Top with lime soda. Serve.

1 tsp salt
1 tbsp cilantro
1/4 cup Santa Fe Tortilla Strips
Spanish Rice
Black Beans

Steps:

  • In a glass bowl, add chicken tenders, margarita mix and salt. Stir so tenders are coated. Cover and refrigerate for 2-4 hours.
  • While chicken is marinating, make your Pico de Gallo:
  • In a bowl, mix together tomato, onion, jalapeno, salt, cilantro and juice from one lime
  • Stir pico. Cover bowl and refrigerate until ready to serve.
  • If making beans & spanish rice - make this about 20-30 minutes before you want to eat. The chicken takes less than 10 minutes to cook.
  • After marinating, heat grill pan (or grill or air fryer) to medium high and spray heavily with non-stick cooking spray
  • When skillet is heated, add half chicken tenders to grill pan. Cook for 2-3 minutes on each side. Turn on your exhaust fan - trust me.

Scampi Butter, recipe follows
2 tablespoons finely chopped fresh cilantro leaves
1/4 pound unsalted butter, softened
1 tablespoon minced garlic
2 tablespoons minced red onion
1 tablespoon chopped fresh parsley leaves
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Dash white pepper
Dash Worcestershire sauce
1 lemon, juiced
1 tablespoon white wine

Steps:

  • Preheat a grill or grill pan over high heat.
  • Lightly coat chicken with oil and sprinkle each evenly on both sides with the salt and pepper. 1 -2 tablespoon chopped fresh cilantro
1 garlic clove, minced (I use more)
1 lime, zest of
2 -3 tablespoons fresh lime juice
1/4 cup extra virgin olive oil
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Mix together the marinade ingredients in a deep bowl. Add the chicken breasts and turn to coat completely. Cover the bowl and refrigerate.

1 red onion, coarsely chopped
4 skinless, boneless chicken breast halves - chopped
1 bunch fresh cilantro, chopped
½ head garlic
⅓ cup water
1 (15.5 ounce) can hominy, drained
1 cup uncooked long grain white rice
1 cube chicken bouillon
salt to taste
¼ teaspoon freshly ground black pepper

Steps:

  • Heat the oil in a large pot over medium-high heat, and saute the onion until tender. Place the chicken in the pot, and cook until lightly browned.
