We really loved this way to serve a chicken breast. Everything is fresh and yummy. The chicken breast comes out of the foil pack so juicy. It's a little on the plain side but the guacamole on top is what adds tons of flavor. This is a delicious and healthy way to serve chicken.

Tips:

  • Choose ripe avocados: Look for avocados that are dark green or black in color and slightly soft when gently pressed. Avoid avocados that are too firm or have brown spots.
  • Use fresh cilantro: Fresh cilantro adds a bright, citrusy flavor to the guacamole. If you don't have fresh cilantro, you can substitute 1/2 teaspoon of dried cilantro.
  • Don't overmix the guacamole: Overmixing the guacamole will make it lose its chunky texture. Mix it just until the ingredients are combined.
  • Serve the guacamole immediately: Guacamole is best served immediately after it is made. If you need to store it, cover it tightly and refrigerate it for up to 2 days.

Conclusion:

Cilantro guacamole chicken is a delicious and easy-to-make meal that is perfect for any occasion. The creamy and flavorful guacamole pairs perfectly with the tender and juicy chicken. This dish can be served as an appetizer, main course, or side dish. It is also a great way to use up leftover chicken. So next time you're looking for a quick and easy meal, give cilantro guacamole chicken a try!
