I love margaritas, sometimes a bit too much! And I also love spicy things and am in love with the herb cilantro. This margarita is so fresh with a nice hint of spiciness. You are going to love this one and really take your cocktail game to the next level.

1/4 cup smoked sea salt, such as Maldon, or regular sea salt
1 teaspoon chile-lime seasoning, such as Tajin (see Cook's Note)
1 lime, juiced
1/2 cup cilantro leaves
1/2 Fresno, jalapeno or serrano chile, chopped
1/2 ounce Simple Syrup, recipe follows
1 ounce orange-flavored liqueur, such as Cointreau
2 ounces good tequila
Ice
Lime soda, for serving
1 cup sugar
1 cup water

Steps:

  • Combine the smoked salt and chile-lime seasoning on a saucer.
  • Rub the rim of a cocktail glass with the lime and dip the glass into the mixture on the saucer.
  • In a cocktail shaker, muddle the cilantro leaves with the chile, lime juice and simple syrup. Add the orange-flavored liqueur and tequila and shake with ice for 20 seconds.
  • Strain into the prepared glass with fresh ice and garnish with the top of the chile. Top with lime soda. Serve.
  • Put the sugar and water in a small saucepan, bring to a simmer over medium-high heat and simmer until the sugar dissolves, about 1 minute. Let cool.

1 cup fresh cilantro, coarsely chopped
Zest/juice of 2 limes
1/2 cup light mayonnaise
2 tablespoons extra-virgin olive oil
1 teaspoon ground cumin
1 teaspoon green pepper sauce
2 lb chicken drumsticks
Large zip-top bag (optional)
Nonstick aluminum foil
1/2 teaspoon complete seasoning

Steps:

  • Chop cilantro. Zest/grate lime peel (no white; 1 teaspoon); squeeze limes for juice (3 tablespoons). Combine in medium bowl: mayonnaise, oil, cumin, pepper sauce, cilantro, lime juice, and lime zest. Reserve 1/2 cup marinade for later use. Place remaining marinade and chicken in zip-top bag (or shallow dish); seal bag and toss to coat. Let stand 10 minutes (or overnight) to marinate. Meanwhile, preheat oven to 450°F. Line baking sheet with foil. Arrange chicken 2 inches apart on baking sheet and sprinkle with seasoning; bake 10 minutes. Turn chicken over; bake 10 more minutes or until chicken is 165°F. (For more browning, broil 2-3 minutes.) Brush reserved marinade over chicken. Serve.

Kosher salt, optional
4 thin slices cucumber, plus a ¼-inch-thick slice for garnish
2 sprigs fresh cilantro
½ cup ice cubes
2 ounces (¼ cup) silver tequila
1 ounce (2 tablespoons) fresh lime juice
½ ounce (1 tablespoon) agave syrup
½ ounce (1 tablespoon) Bols Triple Sec

Steps:

  • To salt the rim of your glass, fill a shallow bowl with water. On a small plate, pour a circle of salt. Dip the rim of a rocks glass or margarita glass in the water, then dip it into the salt and set it aside.
  • In the bottom of a cocktail shaker, muddle the 4 cucumber slices with 1 cilantro sprig until the cucumber releases most of its juices and the cilantro is smashed and fragrant. Add the ice cubes, tequila, lime juice, agave syrup, and triple sec. Cover and shake vigorously for 4 seconds. Pour the drink, including the ice, into the glass. Serve the margarita garnished with the remaining cucumber slice and cilantro sprig.
