2 pounds rainbow carrots (peeled with ends trimmed)
1 tbsp olive oil
1/2 tsp kosher salt
1/2 tsp black pepper
1 tbsp fresh ginger (finely grated)
handful chopped fresh cilantro

Steps:

  • Preheat oven to 425 degrees.
  • Place carrots, oil, salt, pepper and ginger in a large zip lock bag. Toss to evenly coat.
  • Pour carrots in a cast iron skillet.
  • Roast for 35-40 minutes or until caramelized and tender, tossing once halfway through.
  • Top with fresh chopped cilantro and serve.

1 tbsp butter melted

Steps:

  • Mix honey, butter, Ginger and Cilantro Paste in small bowl; set aside. Add scant 1-inch of water to bottom of large skillet. Bring to boil. Place carrots in skillet; cover. Simmer about 5 minutes or until water has mostly evaporated and carrots are tender. Drain any remaining water. Remove skillet from heat.
  • Add honey mixture to skillet. Toss until carrots are well-coated. Serve immediately.

2-inch piece ginger, peeled and roughly chopped
2 shallots, peeled and sliced
3 tablespoons soy sauce
1/4 cup rice wine vinegar
1/4 cup water
1 tablespoon superfine sugar
3 tablespoons vegetable oil
1 teaspoon salt
1 large head Iceberg lettuce, quartered and cored
Freshly chopped cilantro leaves, for garnish
1 large red Thai chile, seeded, deveined and thinly sliced, for garnish

Steps:

  • Combine the carrots, ginger, shallots, soy sauce, vinegar, water, sugar, and vegetable oil in a blender and puree until dressing becomes a slightly thick sauce. Season with the salt.
  • Break the Iceberg wedges a bit to open them up and pour the dressing over top. Finish with cilantro and chile.

1 tablespoon olive oil
2 large onions, chopped
5 medium carrots, chopped
2 cloves garlic, chopped
1 fresh red chile pepper, chopped
3 (28 ounce) cans roma tomatoes, with juice
1 cup vegetable stock
1 bunch chopped fresh cilantro
2 tablespoons balsamic vinegar
1 tablespoon white sugar
1 tablespoon brown sauce
1 tablespoon Worcestershire sauce
salt and pepper to taste
1 cup heavy cream

Steps:

  • Heat the olive oil in a large pot over medium heat, and cook the onions, carrots, garlic, and chile pepper until tender. Mix in tomatoes, vegetable stock, 1/2 the cilantro, balsamic vinegar, sugar, brown sauce, and Worcestershire sauce. Season with salt and pepper. Bring to a boil. Reduce heat to low, and simmer 30 minutes.
  • Transfer the soup in batches to a blender or food processor, and blend until smooth. Return to the pot, and continue cooking until heated through.
  • Remove soup from heat, and mix in the cream. Finely chop the remaining cilantro, and mix into the soup to serve.
