2 pounds pork shoulder (butt), cut into 1 1/2-inch cubes
Salt and pepper
Flour, for dredging
3 to 4 tablespoons vegetable or olive oil
2 tablespoons butter
3 to 4 ribs of celery, chopped, chopped into bite-size pieces
2 carrots, peeled and chopped into bite-size pieces
1 large or 2 medium onions, chopped into bite-size pieces
1 large fresh bay leaf
Fresh herb bundle, thyme, sage and parsley sprigs tied with kitchen twine
1 1/2 teaspoons caraway seeds
1 1/2 cups cloudy cider
2 tablespoons cider vinegar
1 cup chicken stock
3 medium russet potatoes, peeled and cut into bite-size chunks
2 to 3 crisp apples, chopped
Celery tops, chopped for garnish

Steps:

  • Sprinkle the meat with salt and pepper and lightly dredge in flour. Heat the oil in a Dutch oven over medium-high heat. Brown the meat in batches and remove to a plate, adding a little additional oil when necessary. When all of the meat is browned and set aside, add the butter to the Dutch oven to melt. When the butter foams, add the celery, carrots, onions, bay leaf, herb bundle, some salt and pepper and the caraway seeds. Stir to combine and sweat the vegetables for a few minutes. Add the cider and vinegar, and reduce by half. Add the stock and then return the pork to the Dutch oven. Cover and cook about 1 hour over low heat or in an oven preheated to 325 degrees F.
  • Stir in the potatoes and apples and continue to cook until the pork is tender, 30 to 40 minutes.
  • Cool and store for a make-ahead meal. Reheat over moderate heat and garnish with celery tops to serve.

5 slices thick-cut bacon (preferably applewood-smoked), cut crosswise into 1/4-inch-thick strips
3 1/2 pounds boneless pork shoulder (Boston butt) or boneless country ribs, external fat trimmed, cut into 2-inch cubes
Coarse kosher salt
1 cup chopped shallots (about 4 large)
1 cup finely chopped parsnips
6 teaspoons chopped fresh sage, divided
1/2 cup plus 1 tablespoon Calvados (apple brandy; optional)
2 cups low-salt chicken broth
1 12-ounce bottle hard apple cider*
1 1/2 pounds unpeeled baby red potatoes (about 2 inches in diameter), scrubbed, halved
2 large Granny Smith apples, peeled, cored, cut into 1-inch cubes (about 3 cups)
2 tablespoons (1/4 stick) butter, room temperature
2 tablespoons all purpose flour
1 tablespoon whole grain Dijon mustard

Steps:

  • Cook onions in large saucepan of boiling salted water 2 minutes; transfer to bowl of ice water to cool. Peel onions; set aside.
  • Cook bacon in heavy large pot over medium heat until lightly browned. Using slotted spoon, transfer bacon to paper towels to drain. Sprinkle pork shoulder with coarse salt and pepper. Increase heat to medium-high. Working in 2 batches, add pork to same pot and cook until browned, about 7 minutes per batch. Using slotted spoon, transfer pork to large bowl. Reduce heat to medium; add shallots and parsnips. Cover pot and cook until beginning to soften, stirring occasionally, about 5 minutes. Stir in 3 teaspoons sage; stir 1 minute. Add 1/2 cup Calvados, if using; cook until almost evaporated, about 3 minutes. Add broth, cider, reserved bacon, and pork with any accumulated juices. Bring to boil, scraping up any browned bits with wooden spoon. Reduce heat to medium-low; cover and simmer until pork is tender, about 1 hour 15 minutes.
  • Add potatoes and pearl onions to stew; cover and cook until vegetables are almost tender, about 30 minutes. Add apples; cover and cook until potatoes are tender, 15 to 20 minutes. Spoon fat from surface of juices, if necessary. Stir butter and flour in small bowl to form paste; add to pot and whisk to blend. Stir in mustard, 2 teaspoons sage, and 1 tablespoon Calvados, if using. Bring to boil; reduce heat to medium and simmer until thickened, stirring often, 2 to 3 minutes. Season to taste with salt and pepper. DO AHEAD: Stew can be made 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep chilled. Simmer stew over medium heat to rewarm before serving.
  • Divide stew among bowls, sprinkle with remaining 1 teaspoon sage, and serve.
  • Alcoholic apple cider; available in the liquor department of most supermarkets and at liquor stores.

I got this recipe a long time ago from a book called, "Great Recipes From The New York Times." It's one of my most requested recipes. The sauce is delicious, especially sopped up with some fresh, crusty bread, and I always double the sauce and seasoning ingredients when I make it. The stew comes out great anytime, but even moreso during apple season when fresh cider is available, since the better the cider, the better the stew. Hope you enjoy it. (Note that the recipe calls for bacon grease. However, I prefer using a half and half mixture of vegetable or olive oil and butter).

1 1/2 tablespoons olive oil (see note)
1 1/2 tablespoons butter (see note)
3 large onions, sliced
3 tablespoons flour

2 cups good quality apple cider
3 large potatoes, cut in chunks
3 large carrots, sliced thick

Steps:

  • On a medium to medium-high heat, in a large skillet or dutch oven with a cover, heat the fat and cook the onions until browned.
  • While the onions are browning, mix the flour with the salt, pepper and thyme.
  • When onions are browned, remove them from the pan, set aside, and add the beef.
  • When the beef browns, replace the onions and add the flour mixture.
  • Stir to coat all.
  • Add the cider and ketchup, and bring to a boil, stirring occasionally.
  • Then lower the heat and simmer for 1 1/2 hours more, stirring occasionally and skimming the top of the stew if necessary.
  • Add the potatoes and carrots and simmer another 30 to 45 minutes, until the vegetables are tender.
  • NOTE: The original recipe called for 3 tbs. bacon grease, but I prefer not using that. The butter and olive oil mixture gives excellent results.
  • Also, I always double the sauce& seasoning ingredients. If you decide to also, don't forget to double the onions, oil, butter and flour also.

I used to use a basic cider stew recipe, but one day about 25 years ago, I went to make it and found I was out of apple cider. I did have a packet of spiced cider mix, from a holiday gift basket, though. My family loved it, so I experimented further with the recipe. I've been buying the spiced cider packets ever since, just for stew. I find it year round, usually on the top shelf of the unrefrigerated juice aisle, at the grocery store. We've tried many other good stew recipes over the years, but this is the one, with its fluffy dumplings, that my family calls comfort food. The dumplings are optional, and I still use the recipe found in my first Betty Crocker cookbook.

2 tablespoons flour

  • Combine flour and cold water. (I like to shake it in a jar with a sealed lid.) Raise heat to high; slowly pour flour and water into stew, while stirring constantly. As the mixture heats it will thicken into gravy. Thicken as much or as little as you like. You may or may not use all of the flour/water mixture.
  • Make dumplings: Combine flour, baking powder and salt in a small bowl. Using a pastry blender or two knives, cut the shortening into the flour mixture until it resembles fine crumbs.
  • Stir in milk, and drop 10 spoonfuls of dough onto hot meat or vegetables (not directly onto hot liquid).
  • Cook uncovered for 10 minutes.
  • Cover and cook 10 minutes longer.

  • Roll up the pork rind or fold bacon in half, tie with kitchen string and cover with cold water in a large pan.
  • Bring to a light boil and boil for 5 minutes.
  • Drain and cool under cold running water. Set aside.
  • Pat meat dry with paper towels.
  • On a plate, season flour with large pinch of salt and freshly ground pepper.
  • Preheat oven to 325F, if using Dutch oven.
  • Heat oil in a large skillet over medium-high heat.
  • Dip a few pieces of pork at a time in the flour, place in the skillet and brown evenly.
  • As each batch is done, transfer meat to a 5-1/2-quart Dutch oven or a slow cooker.
  • Pour cider into the skillet.
  • Over high heat, scrape the bottom of the pan for 1 minute or so to incorporate all the residue. (If oil and flour are burned, skip this step and pour cider directly into Dutch oven or slow cooker.
  • Strain the cider over the meat.
  • Add apples, turnips and garlic to the pork, and bury pork rind or bacon in the meat.
  • Season with salt and pepper and cover.
  • Be sure to check on the pork and add 1/4 cup water at a time, if necessary, to prevent the meat or vegetables from burning.
  • Bake on the middle shelf of the oven for 1-1/2 hours, or in the slow cooker for about 6 hours, stirring meat, turnips and apples once or twice if possible to ensure even cooking.
  • Discard the pork rind or bacon, put the stew with the apples and turnips in a heated serving bowl, and skim off the fat.
  • Mash some of the apples and turnips into the juices, pour over meat.

3 tablespoons extra-virgin olive oil
5 pounds trimmed boneless pork shoulder, cut into 1 1/2-inch cubes

10 ounces skinless, meaty slab bacon, cut into 1/2-inch dice
1 large onion, thinly sliced
5 garlic cloves, finely chopped
One 750-ml bottle sparkling dry apple cider
1 quart chicken stock or low-sodium broth
2 bay leaves
1/4 cup cornstarch
1 cup heavy cream
3 tablespoons grainy mustard
2 teaspoons finely chopped sage leaves

Steps:

  • 1. In a large enameled cast-iron casserole, melt 1 tablespoon of the butter in 1 tablespoon of the oil. Season the pork with salt and pepper. Add one-third of the pork to the casserole and cook over moderately high heat, stirring occasionally, until well browned, about 8 minutes. Transfer the pork to a baking sheet. Repeat in 2 more batches with the remaining butter, oil and pork. 2. Add the bacon to the pot and cook until golden; add to the pork. Add the onion and garlic to the pot; cook over moderate heat, stirring, until golden and softened, 5 minutes. Add the pork, bacon, cider, stock and bay leaves to the casserole; bring to a simmer. Cover and simmer gently until the pork is tender, 2½ hours. Discard the bay leaves. 3. In a small bowl, whisk the cornstarch with 1/4 cup of water. Add the cornstarch mixture and the cream to the stew and simmer until the liquid is thickened, about 5 minutes. Stir in the mustard and sage and season with salt and pepper.

1 small all ready cooked chicken (i used a rotisserie chicken from the grocery store)
1 1/2 c apple cider
2 1/2 c chicken broth
1/2 medium onion, sliced
4 medium parsnips, sliced
2-3 medium carrots, sliced
1 large yam, sliced
1 tsp thyme
1 Tbsp beau monde seasoning
1 tsp salt
1 1/2 tsp pepper
1/2 tsp onion powder w/parsley
2 Tbsp corn starch (to thicken it up) & equal parts water

Steps:

  • 1. I removed the chicken & skin off the bones and placed in the pan and added the broth and cider and put on low heat. Then, sliced my veggies and got them ready. I cooked this in a pan over medium heat on the stove. I added sauteed onions, parsnips, carrots, yams, beau monde, onion salt, thyme, and pepper. I cooked this for 35 - 45 minutes till the veggies are tender.
  • 2. I removed the skin from the pot and then added a mixture of cornstarch and water to thicken up the broth. I tasted the stew and added a little more salt and pepper.
  • 3. I have spooned this over egg noodles or biscuits. But would be good over a bed of rice or even mashed potatoes.

Reduce heat; cover and simmer for 1 hour and 45 minutes or until the meat is tender. , Add the carrot, celery, potato and onion; return to a boil. I had this in a medieval knight's pub in Torquai ten years ago. The cider is not apple juice like it would be in the US but actually it's British alcoholic cider. Not Strongbow, though, but some sweeter cider with only 4 percent alcohol. For the game use any mix of rabbit, hare, partridge, pheasant and venison or if you don't have game use chicken, beef, rabbit.

2 lbs game
2 tablespoons olive oil
2 onions, diced
1 parsnip, peeled and diced
2 carrots, peeled and diced
2 cups cider
chicken stock
1 teaspoon herbes de provence
2 bay leaves
1 sprig thyme
1/4 teaspoon allspice, ground
3 apples, sliced
cornstarch
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 350 degrees F.
  • In an ovenprove casserole dish large enough to hold the 2 pounds of game, heat the olive oil and brown the game in batches. Set aside.
  • Add onions (and more oil if required), then parsnip and carrots and fry on medium heat for 5-10 minutes.
  • Add cider, herbs and spices, bring to a boil, then add the browned game.
  • Add just enough stock to cover the game and bring to a booil.
  • Cover the casserole with the lid and cook in the oven for about 1-1 1/2 hours or until meat is tender.
  • If the liquid is too thin, mix one tablespoon cornstarch with some cold water, then stir into the stew, bring to another boil and add the sliced apples.
  • Simmer for another 15-20 minutes.
  • Serve with white bread.

4 lbs beef round steak, cut into 1-inch cubes
4 cups carrots, sliced
2 cups celery, sliced
4 medium onions, diced
2 (5 ounce) cans water chestnuts, drained and sliced
2 (6 ounce) cans sliced mushrooms, drained
1/4 cup flour, plus 2 tablespoons
2 tablespoons sugar
2 tablespoons salt
2 (16 ounce) cans tomatoes
2 cups Burgundy wine (or use 2 cups water plus 2 teaspoons instant beef bouillon to substitute the Burgundy wine)
2 quarts apple cider
1 1/2 quarts cranberry juice cocktail
1/4 cup brown sugar (packed)
4 large cinnamon sticks
1 1/2 teaspoons whole cloves

Steps:

  • Heat oven to 325ºF. In roasting pan or 2 Dutch ovens, mix meat, carrots, celery, onion, water chestnuts and mushrooms.
  • Mix flour, sugar and salt and stir into meat mixture. Then stir in tomatoes and Burgundy. Cover.
  • Bake 4 hours or until meat is tender.
  • CRAN-APPLE CIDER: in a large kettle or pot, combine all the ingredients. Heat to boiling; reduce heat and simmer 15 to 20 minutes. Strain. Makes 25 servings (about 1/2 cup each).

1 Tbsp flour
1 Tbsp paprika
1 1/2 lb lean pork, cubed
2 Tbsp oil
1/2 pt dry cider
4 oz mushrooms, sliced
2 leeks, thickly sliced
1 red pepper, de-seeded & sliced
2 cooking apples, peeled, cored & thickly sliced
salt & black pepper
2 tsp cornflour blended in a little cold water, until smooth
3 Tbsp single cream

Steps:

  • 1. Mix the flour & paprika in a plastic bag, add the pork & shake until the meat is evenly coated. Heat oil in a stew pan or flameproof casserole. Add the pork & fry until lightly browned all over. Stir in any remaining flour from the bag.
  • 2. Gradually stir in the dry cider & bring to the boil. Reduce to a simmer, cover the pan or casserole & cook for 1 hour.
  • 3. Stir in mushrooms, leeks, red pepper & apples. Cover & simmer for a further 10 minutes. Season with salt & pepper.
  • 4. Stir in the blended cornflour & simmer for 15 minutes, stirring all the time until the sauce has thickened & is smooth.
  • 5. Leave to cool for about 5 minutes, then stir in the cream. Gently heat through. Serve with unpeeled new potatoes or mashed potato.

Tips:

  • Use a variety of apples. Different apples will give your stew different flavors. For a tart stew, use Granny Smith apples. For a sweeter stew, use Honeycrisp or Fuji apples.
