2 tablespoons dark brown sugar
2 tablespoons apple cider vinegar
2 tablespoons olive oil
1 teaspoon Dijon mustard
½ teaspoon coarsely ground black pepper
6 (3 ounce) fillets salmon fillets, thawed

Steps:

  • Combine brown sugar, apple cider vinegar, olive oil, Dijon mustard, and pepper in a bowl for the marinade.
  • Place salmon fillets into a shallow glass dish and pour 1/2 of the marinade over the fish. Reserve remaining marinade. Cover and refrigerate for 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Discard marinade from the glass dish.

2 tablespoons unsalted butter
1 tablespoon canola oil
Four 4- to 6-ounce salmon fillets, skin removed, at room temperature
Kosher salt and freshly cracked black pepper
1 cup apple cider
2 teaspoons minced shallots
2 tablespoons honey
1 tablespoon whole-grain mustard
1/4 cup creme fraiche
Apple cider vinegar, as needed
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh mint
2 tablespoons chopped chives
1/2 small jalapeño, thinly sliced

Steps:

  • Preheat the oven to 300 degrees F. Fit a baking sheet with a wire rack.
  • In a medium saute pan, heat the butter and canola oil over medium heat. Season the salmon with salt and pepper on both sides and cook on one side until light golden brown, 2 to 3 minutes. Flip the fillets, then add the apple cider and shallots and raise the heat to medium high to bring the liquid to a simmer. Cook the fish another 2 minutes, then gently remove the fillets to the rack and transfer to the oven. Bake 8 to 10 minutes for medium rare.
  • Meanwhile, continue simmering the pan sauce over medium-low heat, whisking often, until slightly reduced, about 2 minutes. Whisk in the honey and mustard and continue to simmer until slightly reduced, 2 to 4 minutes more. Whisk in the creme fraiche and simmer, whisking often, until the sauce is thick and glossy and coats the back of a spoon, 3 to 5 minutes more. Taste and adjust the seasoning, adding apple cider vinegar as desired.
  • Transfer the salmon to serving plates and spoon the sauce over the fish. Garnish with the tarragon, mint, chives and jalapeños.

Olive oil (, for cooking)
1/3 cup (85 ml) soy sauce (, low sodium)
2 tbsp lemon juice
3 tbsp honey
2 tbsp olive oil
2 garlic cloves (, minced)
Parsley, chives or green onion (, finely chopped)
Lemon slices

Steps:

  • Place marinade in a ziplock bag and mix to combine.
  • Add salmon and massage to coat. Marinate for 3 - 24 hours (1 hr minimum).
  • Take out of fridge 30 minutes prior to cooking.
  • Remove salmon onto plate, allowing excess marinade to drain off.
  • Pour remaining marinade into a small saucepan and simmer over medium high for 3 to 5 minutes until syrupy.
  • Pour into bowl/jug (some used for basting, some for serving).
  • Brush BBQ grills with oil. Then preheat to medium (or medium low for strong BBQ's).
  • Drizzle salmon with oil, the place onto the BBQ flesh side down (skin side up).
  • Cook for 3 minutes or until golden, then use tongs to carefully turn.
  • Brush the flesh with Sauce, then close BBQ lid.
  • Cook for 3 - 4 minutes, basting one more time halfway through, or until the internal temperature is 50C/120F(medium rare) or 55C/130F (medium).
  • Transfer salmon to plate and serve with remaining Sauce.

1/2 cup rice wine vinegar
2 tablespoons pure maple syrup
2 tablespoons low-sodium soy sauce
2 tablespoons grated ginger (from a 2-inch knob)
3 cloves garlic, grated
1/2 cup olive oil
Four 6-ounce salmon fillets, skin on (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper
One 10-ounce bag coleslaw mix
1/2 cup sliced almonds
1/2 cup sesame sticks or wonton chips

Steps:

  • Soak a cedar grill plank in water for at least 1 hour and up to 4 hours. Preheat the grill to medium.
  • Mix the rice wine vinegar, maple syrup, soy sauce, ginger and garlic in a medium bowl. Slowly drizzle in the olive oil, whisking constantly, until emulsified. Reserve 1/4 cup for the salad dressing and set aside. Pour the remaining mixture over the salmon and let marinate in the refrigerator for 15 minutes.
  • Meanwhile, place the soaked cedar plank in the center of the preheated grill. Close the lid and let the plank heat until you hear it start to crack, about 15 minutes. Place the salmon fillets, skin-side down, on the plank. Season with 1/2 teaspoon salt and a few grinds of pepper. Close the lid and cook until the salmon is opaque throughout and large flakes break off when flecked with a fork, 15 to 20 minutes. Remove the plank from the grill and serve the salmon from the plank (the fish will slide right off with a metal spatula, leaving the skin behind). Discard the plank.
