Number Of Ingredients 12

crust:
1 1/2 c flour
1/2 c (1 stick) butter, softened
1/4 c packed brown sugar
filling:
3 large eggs
3/4 c corn syrup
3/4 c granulated sugar
2 Tbsp butter, melted
1 tsp vanilla extract
1 3/4 c (11.5-oz. pkg.) nestle semi-sweet chocolate chunks
1 1/2 c coarsely chopped pecans

Steps:

  • 1. FOR CRUST: Beat flour, butter and brown sugar in small mixer bowl until crumbly. Press into prepared 13x9 baking pan. Bake for 12 to 15 minutes or until lightly browned.
  • 2. FOR FILLING: Beat eggs, corn syrup, granulated sugar, butter and vanilla extract in medium bowl with wire whisk. Stir in chunks and nuts. Pour evenly over baked crust. Bake for 25 to 30 minutes at 350, or until set. Cool in pan on wire rack. Cut into bars.

Tips:

  • For the perfect crust, use cold butter and work it into the flour until it resembles coarse crumbs. Then, press it into the pan and chill it before baking.
  • To prevent the pecan filling from becoming too runny, use a combination of light corn syrup and maple syrup. Additionally, be sure not to overcook the filling or it will become thick and chewy.
  • If you don't have a food processor, you can chop the pecans by hand. Just be sure to chop them finely so that they distribute evenly throughout the filling.
  • For a gooey center, use dark corn syrup instead of light corn syrup. You can also add a tablespoon of cornstarch to the filling to help thicken it.
  • If you want a crispy crust, bake the bars for a few minutes longer. You can also sprinkle the crust with sugar before baking for an extra crunch.
  • Serve the bars warm with a scoop of vanilla ice cream or whipped cream.

Conclusion:

These chunky pecan pie bars are the perfect dessert for any occasion. They're easy to make, delicious, and sure to be a hit with everyone who tries them.
