1 cup creamy peanut butter
1/2 cup confectioners' sugar
2/3 cup packed brown sugar
1 stick (8 tablespoons) salted butter, at room temperature
1/4 cup granulated sugar
1 teaspoon vanilla
1 large egg
1 1/2 cups all-purpose flour
1 heaping teaspoon instant coffee granules
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
4 ounces good semisweet chocolate, chopped into chunks

Steps:

  • For the peanut butter filling: Line 2 regular baking sheets and 1 smaller one with parchment paper.
  • Whisk together the peanut butter and confectioners' sugar in a medium bowl until smooth. Using a tablespoon scoop, portion into 18 rounds and place them on the small parchment-lined pan. Put them in the freezer to firm up, at least 20 minutes.

1 cup semi-sweet chocolate chips or 1 cup peanut butter chips
1 cup chopped pecans

Steps:

  • Preheat oven to 375°F.
  • Combine flour, baking soda, and salt in small bowl.
