BEST EVER CHUNKY GUACAMOLE

This is the best version of this classic guacamole dip. The ingredients are kept to a minimum, so it's as fresh-tasting as possible.

Categories     Buffet, Canapes, Snack, Starter

Time 10m

Number Of Ingredients 7

1 large ripe tomato
3 avocados, very ripe but not bruised
juice 1 large lime
handful coriander, leaves and stalks chopped, plus a few leaves, roughly chopped, to serve
1 small red onion, finely chopped
1 chilli, red or green, deseeded and finely chopped
tortilla chips, to serve

Steps:

  • Use a large knife to pulverise 1 large ripe tomato to a pulp on a board, then tip into a bowl.
  • Halve and stone the 3 avocados (saving a stone) and use a spoon to scoop out the flesh into the bowl with the tomato.
  • Tip the juice of 1 large lime, a handful of roughly chopped coriander, 1 finely chopped small red onion and 1 deseeded and finely chopped red or green chilli into the bowl, then season with salt and pepper.
  • Use a whisk to roughly mash everything together. If not serving straight away, sit a stone in the guacamole (this helps to stop it going brown), cover with cling film and chill until needed.

Tips:

  • Select ripe avocados: Choose avocados that are firm but slightly soft when pressed gently. Avoid avocados that are too hard or have dark spots, as they may not be ripe enough or may be spoiled.
  • Use fresh ingredients: The quality of your guacamole depends on the freshness of the ingredients. Use ripe avocados, fresh cilantro, lime juice, and diced tomatoes for the best flavor.
  • Mash the avocados to your desired consistency: Guacamole can be chunky or smooth, depending on your preference. If you prefer chunky guacamole, mash the avocados with a fork or potato masher until they are slightly chunky. If you prefer smooth guacamole, use a food processor to puree the avocados until smooth.
  • Adjust the spiciness: The amount of jalapeño you add to the guacamole determines the spiciness. If you prefer mild guacamole, remove the seeds from the jalapeño before mincing it. If you prefer spicy guacamole, leave the seeds in.
  • Serve immediately or store properly: Guacamole is best served fresh, but it can be stored in the refrigerator for up to 3 days. To store guacamole, press plastic wrap directly onto the surface of the guacamole to prevent it from browning. You can also store guacamole in an airtight container.

This chunky guacamole recipe from Red Gold is a delicious and easy-to-make appetizer or snack. With its simple ingredients and fresh flavors, this guacamole is sure to be a hit at your next party or gathering.
