I have tried this with aspartame sugar substitute (the blue packets) to lower the sugar, and no one could tell! For best results, transfer frozen mixture to a plastic freezer container and freeze for at least one hour before serving (if you can keep your kids out of it for that long!).

4 bananas, broken into chunks
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup white sugar
1 ⅓ cups heavy cream, chilled
⅔ cup cold milk
½ cup chopped toasted walnuts
½ cup miniature semisweet chocolate chips

Steps:

  • In a blender or food processor, combine bananas, lemon juice, vanilla, sugar, cream and milk. Puree until smooth. Transfer mixture to the freezer canister of an ice cream maker and freeze according to manufacturer's instructions. When ice cream begins to stiffen, add walnuts and chocolate chips.

1 1/2 cups skim milk
1 1/2 cups fat-free half-and-half
2 eggs, beaten (I used egg substitute.)
1 cup sugar (or 1/2 cup sugar and 1/2 cup Splenda)
1/4 teaspoon salt
1 medium ripe banana
1/2 teaspoon vanilla
1/8 teaspoon nutmeg
1/4 cup chopped pecan pieces

Steps:

  • Combine the milk, half and half, eggs, sugar and salt in a medium saucepan.
  • Cook and stir over low heat until mixture thickens slightly and coats the back of a spoon.
  • Refrigerate until mixture is thoroughly chilled.
  • Combine the cooled custard with the banana, vanilla and nutmeg in blender container, blending well.
