1/2 cup unsalted butter (softened to room temperature)
1 cup granulated sugar
2 large eggs (room temperature preferred)
1/4 cup vegetable oil
2 medium apples (peeled and diced (approximately 2 cups))
2 cups all purpose flour
1 1/2 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1 tsp baking soda
1 tsp baking powder
1/2 tsp kosher salt

Steps:

  • Preheat oven to 350°F and lightly grease a 9x5 inch loaf pan. Set pan aside.
  • In a large mixing bowl, add butter, sugar, eggs and oil and beat, using a hand mixer, until smooth. Lightly beat in diced apples.
  • In a separate mixing bowl, combine dry ingredients (flour, cinnamon, allspice, nutmeg, baking soda, baking powder and salt) and stir.
  • Add the flour mixture to the bowl with the "wet" ingredients and use a rubber spatula to stir together. Stir until just combined and no flour streaks remain.

1 bag (7 oz) dried mixed fruit, chopped

Steps:

  • Heat oven to 300°F. In very large bowl, mix oats, sunflower nuts, almonds, flour, brown sugar and salt. In small bowl, beat oil, honey and water with wire whisk until well blended. Add liquid ingredients to dry ingredients, stirring until dry ingredients are moistened.
  • Spread on 2 ungreased large cookie sheets with sides. Place both cookie sheets in oven on 2 separate oven racks, one below the other.

The bread is fantastic toasted with butter. It makes two small loafs so I freeze one. There was an Editor's note that fat free Mayonnaise should not be used. One teaspoon vinegar in regular milk replaces the buttermilk.

6 medium granny smith apples or 6 medium other firm apples
1/2 cup packed brown sugar
1 teaspoon cinnamon
2 tablespoons lemon juice
3/4 cup butter, cubed and softened (or margarine)
3 -4 cups granola cereal (with or without raisins)

  • Preheat oven to 400F.
  • Core, peel (or not) and slice apples.
  • In a large bowl, stir together apples, brown sugar, lemon juice and cinnamon.
  • Put in a 9"x9" casserole dish and dot with 1/3 of the butter.
  • Place granola in a plastic bag and crush with a rolling pin to break it up.
  • Place granola in a bowl and add the rest of the butter.

  • Cover the dish with foil and bake for 40 to 45 minutes.
  • Remove foil and bake about 10 minutes longer or until the topping has browned.
  • Let stand for approximately 10 minutes then serve with vanilla ice cream.
