"It's one of my husband's favorites. I slimmed down the recipe by using sugar-free gelatin and reduced-fat topping."

2 packages (.3 ounce each) sugar-free lime gelatin
5 cups boiling water, divided
4 cups cold water, divided
2 packages (.3 ounce each) sugar-free lemon gelatin
1 package (8 ounces) reduced-fat cream cheese, cubed
1 can (8 ounces) crushed pineapple, undrained
1/4 cup chopped pecans
2 cups reduced-fat whipped topping
2 packages (.3 ounce each) sugar-free cherry gelatin

Steps:

  • In a bowl, dissolve lime gelatin in 2 cups boiling water. Add 2 cups cold water; stir. Pour into a 13-in. x 9-in. dish coated with cooking spray. Refrigerate until almost set, about 2 hours., In a bowl, dissolve lemon gelatin in 1 cup boiling water; whisk in cream cheese until smooth. Stir in pineapple and pecans. Fold in whipped topping. Spoon over first layer. Refrigerate until firm, about 1 hour., In a bowl, dissolve cherry gelatin in remaining boiling water. Add remaining cold water; stir. Chill until syrupy and slightly thickened. Carefully spoon over second layer. Refrigerate until set, about 4 hours.

6 oz lime flavor jello
5 c hot water
4 c cold water
1 oz 3oz package lemon flavor jello
1/2 c miniature marshmallows, cut into pieces
1 can(s) pineapple juice, from canned pineapple
8 oz cream cheese
1 can(s) 1 lb. 4 oz - crushed pineapple
1 c heavy cream, whipped
1 c mayonnaise
6 oz cherry flavored jello

Steps:

  • 1. Dissolve Lime Jello in 2 cups, HOT water. Stir till dissolved. Add 2 cups, COLD water; stir. Pour into 14x10x2 glass pan. Chill until partially set
  • 2. Dissolve Lemon Jello in 1 cup HOT water in the top of a double boiler. Add marshmallows and stir to melt. (Make sure you have water boiling in the bottom pan of the double boiler... trust me, that helps!)
  • 3. Remove from heat. Add 1 cup drained pineapple juice from can of fruit; to cream cheese mix.
  • 4. Beat until well blended and stir in pineapple fruit. Cool slightly. Fold in whipped cream and mayonnaise. Chill until thickened.
  • 5. Pour pineapple mixture onto layer of Lime Jello. Chill until almost set.
  • 6. Dissolve Cherry Jello in 2 cups HOT water. Stir till dissolved. Add 2 cups COLD water. Stir. Chill until "syrupy". Pour Cherry Jello over pineapple layer. Chill till firm.

2 pkg lime jello
1 pkg lemon jello
2 pkg cherry jello
1 c water
1 can(s) crushed pineapple, drained save the juice
8 oz cream cheese
1 c mayonaise
1 c heavy cream
1/2 c small marshmellows

Steps:

  • 1. Prepare lime jello according to package directions
  • 2. Pour into 15 X 10 1/2 pan
  • 3. Chill until almost set
  • 4. Dissolve lemon jello in hot water in top of double boiler.
  • 5. Add marshmallows and melt
  • 6. Remove from heat
  • 7. Add 1 cup pineapple juice and cream cheese
  • 8. Beat until blended
  • 9. Stir in 1 cup drained pineapple. Cool slightly
  • 10. Fold in mayonnaise and heavy cream
  • 11. Pour this mixture over the lime jello which by now has set up
  • 12. Chill until almost set
  • 13. Prepare cherry jello according to directions on package
  • 14. Chill until the consistency of egg white
  • 15. Pour over pineapple layer
  • 16. Chill until firm
