Christmas Morning Wife Saver (Breakfast Casserole) image

I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

16 slices bread, crusts removed - divided
16 slices Canadian bacon
16 slices sharp Cheddar cheese
6 large eggs
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon dry mustard
¼ cup minced onion
2 tablespoons diced green bell pepper
2 tablespoons diced red bell pepper
2 teaspoons Worcestershire sauce
1 dash hot sauce
3 cups whole milk
½ cup butter, melted
1 cup crushed corn flakes cereal

Steps:

  • Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
  • Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
  • Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

This is a recipe that was handed down to me by my Mom. I use it Christmas morning because I can make it the night before, store it in the refrigerator and throw it in the oven Christmas morning to cook while the family opens gifts. Once gift opening is done - breakfast is ready! Kids love it.

16 slice white bread, crusts removed
16 slice cooked ham or peameal bacon
16 slice sharp cheddar cheese or processed cheese
EGG MIXTURE
6 eggs
1/2 tsp salt
1/2 tsp pepper
1/2 tsp dry mustard
1/4 c minced onion
2 tsp worcestershire sauce
3 c whole milk
1/4 lb butter
special k or corn flakes

Steps:

  • 1. In a 9X13 glass baking dish, place 8 slices of bread. Cover bread with 8 slices of ham or peameal. Lay 8 slices of cheddar cheese on top of bacon or ham then cover with remaining 8 slices of bread. Should look like a sandwich.
  • 2. In a bowl, beat eggs with salt and pepper. To the egg mixture add dry mustard, onion, Worcestershire sauce and milk. Pour over sandwiches. Cover and let stand in fridge overnight.
  • 3. In morning, melt 1/4 lb. butter and pour over top of casserole. Cover with crushed corn flakes or special K.
  • 4. Bake uncovered for 1 hour at 350 degrees. Let sit for 10 minutes. Serve with fresh fruit or hot cinnamon rolls.

16 slices bread, crust removed
sliced ham
sliced cheese
6 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1/2-1 teaspoon dry mustard
1/4 cup minced onion
1/4 cup green pepper, finely chopped (green capsicun)
1 -2 teaspoon Worcestershire sauce
3 cups whole milk
1 dash Tabasco sauce (optional)
1/4 lb butter, melted
enough crushed corn flakes, to cover

Steps:

  • In a 9"X 13" buttered pan, put 8 slices of bread that the crust has been removed.
  • Add ham layered over bread.
  • Lay cheese over ham.
  • Cover with rest of bread.
  • In bowl beat eggs, salt and pepper.
  • To egg mixture add dry mustard, onion, green pepper, worcestershire sauce, milk and Tabasco (optional) Pour over bread, cover and let stand in fridge overnight.
  • In the morning cover with crushed corn flakes.
  • Melt 1/4 1b butter and pour over top of flakes.
  • Bake uncovered for 1 hour at 350 degrees F.
  • When baked let sit for 10 minutes before serving.
