Steps:
- 1. Mix grated apples and cranberry sauce in large bowl and mix well. Place in 8x8 or 9x9 inch pan and put in refrigerator until set.
- 2. Whip the heavy cream. Then add the vanilla, walnuts, and powdered sugar and mix until well blended. Pour on top of cranberry/apple mixture. Garnish with cherries and parsley, if desired. Place in freezer.
- 3. After mixture has set in freezer sufficiently, cut into squares, cover, and keep frozen until time for use. Remove from freezer 10-15 minutes prior to serving.
Tips:
- Use fresh cranberries for the best flavor and texture. Frozen cranberries can be used in a pinch, but they will not be as flavorful or plump.
- To make the salad ahead of time, simply prepare the salad as directed and refrigerate for up to 3 days. When ready to serve, bring to room temperature for 30 minutes before serving.
- Garnish the salad with additional chopped walnuts, pecans, or pistachios for an extra crunchy topping.
- For a sweeter salad, add an extra 1/2 cup of sugar or honey to the dressing.
- If you don't have any oranges on hand, you can substitute another citrus fruit, such as grapefruit or lemon.
Conclusion:
This Christmas Cranberry Salad is a delicious and festive side dish that is perfect for any holiday gathering. It is easy to make and can be prepared ahead of time, making it a great option for busy hosts. The salad is also a good source of vitamins and minerals, making it a healthy choice as well. So next time you are looking for a festive and delicious salad to serve at your next holiday party, give this Christmas Cranberry Salad a try!
