1 (17.5 ounce) package dry oatmeal cookie mix
½ stick butter, chilled and cut into small pieces
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
1 egg
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 9x13-inch baking pan with cooking spray.
  • Pour cookie mix into a large bowl. Cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs into the bottom of the prepared baking pan.

This is so simple , you will make it often using different fruit each time.

CRUST:
1/3 c cold butter
1/3 c brown sugar, firmly packed
1 c flour
FILLING:
8 oz cream cheese, softened
1/4 c granulated sugar
1 large egg
1 Tbsp lemon juice
1/4 c green maraschino cherries
1/4 c red maraschino cherries

Steps:

  • 1. Crust: Cut butter in chunks, add brown sugar and flour. Mix at low speed. Mix at medium speed for 1 minute. Reserve 1/2 cup crumbs. Press remaining crust mixture into an 8-inch square baking pan. Bake in center of oven at 350^ for 10-12 minutes. --- Filling: Beat cream cheese, sugar, egg and lemon juice together at medium speed until fluffy about 2 minutes. Stir in chopped fruit. 1 can (21 oz) cherry pie filling
