Time 1h

Yield 1 loaf, 12 serving(s)

Number Of Ingredients 10

1/2 cup unsalted butter, softened
1 cup sugar
2 large eggs, well beaten
3 ripe bananas, broken into bits
1 1/4 cups all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground mace
1/8 teaspoon ground ginger
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat the oven to 350°F Butter and flour one 8 ½ x 4 ½" loaf pan.
  • Cream the butter with the sugar until light and fluffy.
  • Add the eggs and beat until combined. Beat in the bananas.
  • Combine the flour, spices, salt and baking soda in another bowl, then fold in the dry ingredients into the creamed mixture just until combined; do not over mix.
  • Pour into the pan and bake until a tester stuck in the middle of the banana bread comes out clean, 50-60 minutes.
  • Let cool on a rack before removing from the pan.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. Look for bananas with brown or yellow peels.
  • Don't overmix the batter: Overmixing the batter will result in a tough, dense loaf of banana bread. Mix just until the ingredients are combined.
  • Bake the banana bread at the right temperature: The ideal temperature for baking banana bread is 350°F. This will ensure that the bread bakes evenly and doesn't overcook.
  • Check the banana bread for doneness: Insert a toothpick into the center of the loaf. If it comes out clean, the bread is done baking.
  • Let the banana bread cool before slicing: Allow the banana bread to cool completely before slicing it. This will help to prevent the bread from crumbling.

Conclusion:

Christmas banana bread is a delicious and festive treat that is perfect for any holiday gathering. With its moist texture, sweet flavor, and rich aroma, this bread is sure to be a hit with everyone at your table.
