Time 1h

Yield 4 serving(s)

Number Of Ingredients 10

1/4 cup butter
1 medium onion, chopped
1/4 cup flour, plus
2 tablespoons flour
2 cups shucked clams (I used 4 cans, canned chopped and baby clams with juice)
3 (8 ounce) bottles clam juice
1/2 lb boiling potato, peeled chopped and cooked
1 1/2 cups half-and-half cream (I use fat free)
salt and pepper
1/4 teaspoon chopped fresh dill or 1/4 teaspoon i used 1/4 teaspoon dried dill

Steps:

  • Melt butter in a large kettle or stock pot over medium heat, add onions and cook until clear; stir in flour and cook over low heat, stirring frequently, for 2 to 4 minutes; set aside to cool.
  • Cook peeled and chopped potatoes until tender; drain and set aside.
  • If using shucked clams, in a separate pot, bring clams and clam juice to a boil; reduce heat and simmer for 15 minutes; OTHERWISE add clam juice and clams to butter, onion and flour mixture.
  • Bring to a simmer while stirring constantly, continue stirring and slowly bring to a boil; reduce heat, add cooked potatoes.
  • Mix in half and half, salt and pepper and chopped or dried dill, heat through but do-not boil, enjoy.

Tips:

  • Choose the right clams: Fresh, live clams are essential for the best chowder. Look for clams that are tightly closed and have a briny smell. Avoid any clams with broken shells or that are open.
  • Clean the clams thoroughly: Before cooking, soak the clams in cold water for 30 minutes to allow them to expel any sand or grit. Scrub the shells with a stiff brush to remove any dirt or debris. Discard any clams that do not close when tapped.
  • Use a variety of vegetables: Chowder is a great way to use up leftover vegetables. Try adding carrots, celery, onions, potatoes, corn, or leeks. You can also use frozen vegetables if fresh ones are not available.
  • Cook the vegetables properly: The vegetables should be cooked until they are tender but still have a bit of a bite. Overcooked vegetables will make the chowder mushy.
  • Add the clams at the end: Clams cook quickly, so they should be added to the chowder towards the end of the cooking time. This will prevent them from becoming tough.
  • Season the chowder to taste: Chowder should be flavorful but not too salty. Start with a small amount of salt and pepper and add more to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Serve the chowder hot: Chowder is best served hot, with a side of crackers or crusty bread.

Conclusion:

Clams are versatile seafood that can be used in a wide variety of easy-to-make dishes. Clams are a good source of protein, iron, and vitamin B12. They are also low in calories and fat. The next time you're looking for a delicious and healthy meal, try one of these clam recipes. You won't be disappointed!
