CHICKEN CHOW MEIN CASSEROLE
This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

CHOW MEIN CASSEROLE
This is my Mom's recipe. Don't know where she got it, but it is delicious. We always put it over chow mein (toasted) noodles, but it is good over rice, soba and Marco Polo noodles as well. Even my Father liked this and he always swore he hated cooked onions.

Tips:
- Use fresh vegetables: Fresh vegetables will give your chow mein casserole the best flavor and texture. If you don't have fresh vegetables on hand, you can use frozen vegetables. Just be sure to thaw them before adding them to the casserole.
- Don't overcook the noodles: The noodles should be cooked al dente, or slightly firm to the bite. If you overcook them, they will become mushy and the casserole will be less enjoyable.
- Use a flavorful sauce: The sauce is what really brings the chow mein casserole together. Be sure to use a sauce that has a lot of flavor. You can use a store-bought sauce or make your own.
- Add some protein: Chow mein casserole is a great way to use up leftover chicken, beef, or pork. You can also add tofu or tempeh for a vegetarian option.
- Top it with cheese: Cheese is a classic topping for chow mein casserole. It adds a gooey, cheesy flavor that everyone will love.
Conclusion:
Chow mein casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken, beef, or pork. With a few simple tips, you can make a chow mein casserole that is sure to please everyone at your table.
