Categories     side-dish

Time 35m

Yield 4 to 6 servings (or about 3 cups)

Number Of Ingredients 5

1 tablespoon vegetable oil
10 ounces Mexican pork chorizo, casings removed (see Cook's Note)
1 small onion, diced
1 pound red skinned new potatoes, cut into small (1/4-inch) dice, and boiled
Kosher salt and fresh ground black pepper

Steps:

  • Heat the oil in a heavy large skillet over medium-high heat. Add the chorizo and cook, breaking up the clumps, until dry and crisp, about 10 minutes. Using a slotted spoon, transfer the chorizo to a paper lined plate to absorb any additional oil. Pour off all but 1 tablespoon of fat from the pan and heat the pan over medium-high heat. Add the onions and boiled potatoes and saute until brown, about 12 minutes. Stir in the cooked chorizo and season with just a little salt and pepper, to taste. Transfer to a serving bowl and serve.

POTATO APPLE CINNAMON FRITTERS #5FIX

Potato Apple Cinnamon Fritters #5FIX image

5 Ingredient Fix Contest Entry I have an 8 year old son with Asperger Syndrome. Eating any fruits or veggies is nearly unheard of for him. I have become very clever sneaking in items undetected by his sensitive palate. The potatoes add amazing texture to these fritters. He eats them like donuts, and I don't feel so guilty. I used Martha White brand Cinnamon Biscuit mix for these.

PATATES ETOUFFEES (SMOTHERED POTATOES)

Patates Etouffees (Smothered Potatoes) image

You can use any kind of stock you want, depending on the flavor of the main dish you serve these with--beef stock if you're serving beef, chicken stock with chicken--or use vegetable stock for a completely vegetarian dish. You can even use water if you absolutely must. A cast-iron pan is preferred. Do not use nonstick. From the Prudhomme Family Cookbook. Thanks to the commenters who noted that black pepper was listed twice. The second ingredient should have been white pepper.

Papas con Chorizo (Mexican Chorizo and Potatoes) image

The bold, delicious flavors of this traditional Mexican dish are sure to become your new favorite breakfast. Top with a fried or poached egg, or serve inside corn tortillas. I like to top mine with Cotija cheese, cilantro, and hot sauce, with a side of avocado. Home- or store-made chorizo is best, however, feel free to use your favorite brand.

SHREDDED POTATO BASKETS WITH CHEESE AND BACON #5FIX

Shredded Potato Baskets With Cheese and Bacon #5FIX image

5-Ingredient Fix Contest Entry - This is my tasty version of a popular appetizer served at a local restaurant. The crispy yet chewy "baskets" made with the shredded potatoes (hashbrowns) takes this side dish to the next level and is a family favorite.

Provided by Souxie

Categories     Pork

Time 40m

Yield 12 baskets, 4 serving(s)

Number Of Ingredients 5

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
1 large egg
2 -3 tablespoons flour
1 (12 ounce) package shredded cheddar cheese
8 ounces bacon, cooked and crumbled

Steps:

  • Heat oven to 375 degrees F. Generously coat 2 6-compartment non-stick muffin tins with cooking spray. Set aside.
  • In a large bowl, combine the potatoes, egg and flour, adding just enough flour so mixture "sticks together". Divide evenly among the prepared muffin compartments. Using the back of a spoon, firmly press potato mixture into bottom and up sides of each compartment, making a "well" in each.
  • Place in oven and bake for 20-25 minutes or until just starting to brown. Remove from oven and divide shredded cheese evenly among cups and top each with crumbled bacon. Return to oven and bake another 5-10 minutes or until "baskets" are golden brown and cheese and bacon is hot, melted and bubbly.
  • Remove from oven and let rest for 5 minutes. To serve: gently run the tip of a sharp knife blade around rim of each cup to loosen. Release each basket and place on serving platter.

Tips:

  • Choose the right chorizo: Spanish chorizo is a popular choice for this dish, but Mexican chorizo can also be used. If using Mexican chorizo, be sure to remove the casings before cooking.
  • Use a variety of potatoes: A combination of Yukon Gold and red potatoes creates a nice texture and color in this dish.
  • Don't overcrowd the pan: When cooking the potatoes, be sure to give them enough space in the pan so that they can brown evenly.
  • Cook the chorizo until it is crispy: This will help to infuse the potatoes with flavor.
  • Use a good quality cheese: A sharp cheddar or Monterey Jack cheese will melt well and add a nice flavor to the dish.
  • Serve immediately: This dish is best served hot out of the oven.

Conclusion:

Chorizo smothered potatoes are a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of chorizo, potatoes, and cheese is sure to please everyone at the table. With a few simple tips, you can make sure that your chorizo smothered potatoes turn out perfect every time.
