Time 20m

Yield 8 serving(s)

Number Of Ingredients 6

2 cups chokecherry juice
3 tablespoons cornstarch
1 cup sugar
1 pinch salt
1/2 teaspoon almond extract
1 9 in.baked pastry shell

Steps:

  • Combine first five ingredients in saucepan.
  • Cook ingredients until thick, stirring constantly to avoid scorching.
  • Cool.
  • Pour into pie shell and place in refrigerator until thoroughly chilled.
  • Serve with whipped cream or cream topping.

Tips:

  • For the best flavor, use fresh chokecherries when they are in season. If you can't find fresh chokecherries, you can use frozen or dried chokecherries instead.
  • To remove the pits from the chokecherries, use a cherry pitter or a sharp knife. If you are using a knife, be careful not to cut yourself.
  • If you don't have a pie crust mix on hand, you can make your own using the recipe provided in the article.
  • To prevent the pie crust from becoming soggy, pre-bake it for 10-15 minutes before adding the filling.
  • Be careful not to overfill the pie crust. Leave about 1/2 inch of space around the edges so that the pie can expand while baking.
  • Bake the pie in a preheated oven until the crust is golden brown and the filling is bubbling.
  • Let the pie cool for at least 1 hour before serving. This will give the filling time to set.
