Categories     Cookies     Chocolate     Dessert     Bake

Yield 6 (3) dozen cookies

Number Of Ingredients 11

2 (1) cup chocolate chips
1 (1/2) cup butter
2 (1) egg
1 ½ (3/4) cup sugar
2/3 (1/3) cup flour
½ (1/4) cup cocoa
2 (1) tsp baking powder
3 (1 1/2) tsp vanilla
½ (1/4) tsp salt
4 (2) cups chopped nuts (optional - I like better without, but some prefer them in)
2 (1) cup chocolate chips

Steps:

  • Melt chocolate chips and butter. Beat eggs and sugar till light and lemon color (nice and fluffy). Reduce to low and add chocolate/butter mixture, flour, cocoa, bkg powder, vanilla, and salt. Beat till blended. Increase speed to medium, beat 2 minutes. Stir in nuts and remaining chips. Drop by heaping teaspoon onto greased cookie sheets. Spread batter slightly. Bake for 10-15 minutes at 325° till tops are shiny and cracked. Cool ON sheets for 10 minutes. Carefully remove to wire rack for complete cooling. The key here is to keep beating them. I have had friends who can't seem to get them other than runny, but I don't think they beat them enough or long enough. Pure chocolate heaven!

Time 33m

Yield 48 cookies

Number Of Ingredients 11

1/3 cup flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
6 ounces semisweet chocolate, chopped
1/2 cup butter
2 large eggs
3/4 cup sugar
1 1/2 teaspoons vanilla extract
2 cups pecans, chopped
1 cup semi-sweet chocolate chips or 1 cup milk chocolate chips

Steps:

  • Preheat over to 325°.
  • Line 2 cookie sheets with parchment paper.
  • In small bowl combine flour, cocoa, baking powder and salt.
  • In heavy saucepan melt chocolate and butter over low heat stirring until smooth.
  • Remove from heat and cool.
  • In large bowl beat at medium speed, eggs and sugar until light and lemony colored, about 2 minutes.
  • Reduce to low speed and add cooled chocolate mixture, flour mixture and vanilla.
  • Beat just until blended.
  • Increase speed to medium and beat 2 minutes.
  • With wooden spoon, stir in pecans and chips.
  • Drop by rounded teaspoonfuls 2-inches apart on cookie sheets.
  • With back of spoon, spread batter into 2 inch rounds.
  • Bake until tops are shiny and cracked, about 13 minutes.
  • If doing 2 sheets at once, rotate between racks at about 6 minutes.
  • Cool 10 minutes on sheet then transfer to rack to cool totally.

Tips:

  • Always use high-quality chocolate for the best flavor and texture.
  • Use a double boiler or a heatproof bowl set over a saucepan of simmering water to melt the chocolate. This will prevent the chocolate from burning.
  • When making chocolate mousse, it's important to whip the cream until it forms stiff peaks. This will help to create a light and airy mousse.
  • When baking chocolate cookies, be sure to chill the dough before baking. This will help to prevent the cookies from spreading too much.
  • If you're making chocolate truffles, be sure to roll them in cocoa powder or chopped nuts before serving. This will help to prevent them from sticking to your hands.

Conclusion:

Chocolate is a delicious and versatile ingredient that can be used in a variety of desserts. By following the tips above, you can create delicious chocolate desserts that will impress your friends and family.
