DARK CHOCOLATE AND HAZELNUT CANDIES

Dark Chocolate and Hazelnut Candies image

Inspired by buckeye candies, these chocolate-hazelnut treats get a light and crunchy texture from finely ground toasted rice cereal.

Provided by Food Network Kitchen

Categories     dessert

Time 1h

Yield 32 to 36 balls

Number Of Ingredients 8

36 whole blanched hazelnuts (about 1/3 cup)
1/2 cup confectioners' sugar
1/2 cup toasted rice cereal
Kosher salt
1/2 cup chocolate-hazelnut spread
1 1/2 tablespoons unsalted butter, melted
4 ounces bittersweet chocolate chips
2 teaspoons vegetable shortening

Steps:

  • Preheat the oven to 350 degrees F. Put the hazelnuts on a small baking sheet and toast in the oven until golden, 10 to 12 minutes. Let cool. Transfer the hazelnuts to a cup and line the baking sheet with wax paper.
  • Meanwhile, combine the confectioners' sugar, rice cereal and 1/2 teaspoon salt in a food processor and pulse until finely chopped, about 20 times. Add the chocolate-hazelnut spread and melted butter. Pulse until the mixture comes together in clumps, about 15 times; the mixture should be dry to the touch but hold together when pressed.
  • Roll the mixture into teaspoon-size balls and place on the prepared baking sheet. Press a hazelnut into each ball and then press the dough back into a ball shape, leaving part of the hazelnut exposed at the top. Freeze the balls at least 20 minutes to let them firm up.
  • Put the chocolate chips, shortening and a pinch of salt in a small microwave-safe bowl. Microwave until the chips on the bottom start to melt, 1 1/2 to 2 minutes. Stir until the mixture is melted and smooth. Gently stick a toothpick into the upper half of a ball, avoiding the hazelnut, and dip into the melted chocolate, leaving the top half uncoated. Allow the excess chocolate to drip off and return the ball to the baking sheet. Smooth over the hole from the toothpick with your fingertip. Repeat with the rest of the balls. Refrigerate until firm, about 20 minutes. You can store the balls covered in the refrigerator for up to 5 days.

Time 5h20m

Yield Makes 8 slices

Number Of Ingredients 5

1 1/2 cups blanched hazelnuts
Unsalted butter, room temperature, for brushing
3 cups chopped dark chocolate (14 ounces)
1 1/2 cups chopped milk chocolate (7 ounces)
1 cup chocolate-hazelnut spread, such as Nutella

Steps:

  • Preheat oven to 350 degrees. Place hazelnuts in a single layer on a rimmed baking sheet; toast until golden and fragrant, about 14 minutes.
  • Lightly brush a standard 9-by-5-inch loaf pan with butter; line in both directions with parchment. Melt 1 1/2 cups dark chocolate in a medium bowl set over a saucepan of simmering water. Brush loaf pan all over with half of melted chocolate; freeze 5 minutes. Brush again with remaining melted chocolate and freeze 5 minutes more.
  • In a medium bowl set over a saucepan of simmering water, melt remaining 1 1/2 cups dark chocolate with milk chocolate, stirring together until smooth. Remove from heat; stir in hazelnut spread and hazelnuts. Pour into chilled chocolate shell and refrigerate until firm, at least 4 hours. Trim chocolate around top of loaf pan with a paring knife. Let temper 30 minutes before slicing crosswise into 8 pieces. Torrone can be refrigerated, covered, up to 2 weeks.

Tips:

  • Use high-quality chocolate. The better the chocolate, the better the truffles will be. Look for chocolate with a cocoa content of at least 70%.
  • Toast the hazelnuts. Toasting the hazelnuts will bring out their flavor and make them more香脆.
  • Be patient. Making truffles takes time. Don't rush the process, or you'll end up with subpar results.
  • Chill the truffles before dipping them in chocolate. This will help them hold their shape.
  • Use a double boiler to melt the chocolate. This will help prevent the chocolate from burning.
  • Dip the truffles in chocolate using a fork or toothpick. This will help you avoid getting chocolate all over your hands.
  • Roll the truffles in cocoa powder, chopped nuts, or sprinkles. This will add flavor and texture to the truffles.
  • Store the truffles in the refrigerator for up to 2 weeks.

Conclusion:

Chocolate truffles are a delicious and elegant treat that is perfect for any occasion. They are also relatively easy to make, so you can impress your friends and family with your culinary skills. With a little patience and attention to detail, you can create perfect chocolate truffles that everyone will love.
