With two variations to choose from—a classic chocolate version and a white chocolate version—these snowball cookies offer something for every palate.

The classic chocolate snowball cookies boast a deep, decadent cocoa flavor that harmonizes beautifully with the buttery shortbread base. The addition of chopped walnuts adds a delightful textural contrast, creating a cookie that's both soft and chewy on the inside and perfectly crumbly on the outside. After baking, the cookies are generously coated in powdered sugar, giving them a snowy appearance and a touch of sweetness that perfectly balances the richness of the chocolate.

For those who prefer a sweeter, milder flavor, the white chocolate snowball cookies are an excellent choice. Made with a combination of white chocolate chips and chopped walnuts, these cookies exude a creamy, vanilla-like flavor with a hint of nuttiness. The white chocolate chips melt and create pockets of gooey goodness, while the powdered sugar coating adds a delicate sweetness that ties everything together.

Whether you're a fan of classic chocolate or prefer the allure of white chocolate, these snowball cookies are sure to become a favorite. With their festive appearance and irresistible taste, they're guaranteed to bring joy to any gathering and leave your taste buds craving more. SNOWBALLS II

These are technically Mexican Wedding Cakes or Russian Teacakes, but my grandmother gave up on us calling them that years ago!

Provided by Lori Dehn

Categories     Desserts     Cookies

Time 45m

Yield 30

Number Of Ingredients 8

1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

CHOCOLATE WALNUT COOKIES

This recipe is a classic and has always been well-received at the cookie swap. I measure out my dry ingredients on a piece of parchment paper and this makes it easier to add into the mixer. I also make large batches of the dough and keep it in the fridge during the holidays so I always have freshly baked cookies on hand when company drops in.
