Tips:

  • Mise en place: Before you start baking, make sure you have all of your ingredients and equipment ready. A digital kitchen scale is recommended to ensure precise measurements, especially for the chocolate.
  • Use high-quality chocolate: The quality of the chocolate you use will greatly affect the flavor of the cake. Choose a dark chocolate with a cocoa content of at least 70% for a rich and decadent flavor.
  • Temper the chocolate: Tempering the chocolate is a crucial step that helps stabilize the chocolate and gives it a smooth, velvety texture. If you don't temper the chocolate, it may seize or become grainy.
  • Don't overmix the batter: Overmixing the batter can result in a tough, dense cake. Mix the ingredients just until they are combined.
  • Bake the cake at the right temperature: The cake should be baked at a low temperature (325°F or 163°C) for a long time (about 1 hour and 15 minutes). This will help prevent the cake from drying out and ensure that it bakes evenly.
  • Let the cake cool completely before frosting it: This will help prevent the frosting from melting and sliding off the cake.
