1 9" pie shell, baked & cooled
2 Tbsp semi sweet chocolate chips
1 Tbsp butter
20 caramels
1/3 cup cream or milk
1 1/4 cup salted peanuts
1 cup semi sweet chocolate chips
2 Tbsp butter
8 oz container Cool Whip
Whipped cream and shaved chocolate for garnish (optional)

Steps:

  • Melt chocolate chips and butter in microwave; spread on the bottom of the pie crust. Chill a few minutes till set.
  • Melt caramels and cream in glass bowl in microwave, stirring often. Cool slightly, add peanuts and pour into pie shell. Chill.
  • Melt the 1 cup of chips and 2 T butter in a saucepan over low heat, stirring often. Let sit for 15 minutes.
  • Fold about 1/3 of the Cool Whip into the cooled chocolate mixture. Fold in remaining Cool Whip.
  • Spread over caramel layer and chill till set; about 1 hour.
  • Garnish pie with whipped cream.

1 cup pecans
1 (9 inch) pie shell, baked
1 cup sweetened condensed milk
1 cup brown sugar
1 cup butter
¼ cup corn syrup
⅔ cup semi-sweet chocolate chips
2 tablespoons butter
1 egg yolk
3 tablespoons sweetened condensed milk

Steps:

  • Place pecans into bottom of pie shell.
  • To Make Filling: In a heavy saucepan over medium heat, cook condensed milk, brown sugar, butter and corn syrup. Stir and bring to a boil; stir continuously for at least 5 minutes. Remove from heat, then slowly beat with a spoon until mixture starts to thicken; will take about 2 minutes. Be sure not to over beat or it will harden too much. Pour mixture into pie shell; cover and refrigerate for about an hour. Filling ingredients may be halved to make for a less rich pie.
  • To Make Topping: In a medium saucepan, cook chocolate and butter over low heat until melted together. Stir in condensed milk; mix well. Remove from heat; allow to cool just enough so that yolk won't cook when added, but not so cool that the chocolate hardens; cooling time will be about 3 minutes. Stir in egg yolk to chocolate mixture; spread over cooled filling. Place pie back in refrigerator and cool for another hour.

  • Pour ice cream topping into pie shell; you may have to tilt the shell around so the topping spreads evenly .
  • Arrange pecans on the topping and chill 15-20 minutes .

Water, vegetable oil and eggs called for on cake mix box
1 bag (14 oz) caramels
1/2 cup evaporated milk
1 cup chopped pecans
1 bag (6 oz) semisweet chocolate chips (1 cup)
Ice cream or Whipped cream, if desired
