CHOCOLATE-COVERED ALMOND TOFFEE BARS

- Position rack in center of oven and preheat oven to 375 degrees F.
- Spread nuts on a baking tray and bake until toasted, 10 to 15 minutes, turning nuts after 7 to 8 minutes to ensure even toasting. Cool and chop coarsely. You should have about 2 cups. Set aside. Clean baking tray and coat with vegetable oil or vegetable oil spray. Spray both sides of the offset spatula with vegetable oil spray. Set aside.
- Make the toffee: Place sugar in a small deep saucepan. Add the corn syrup and water or rum and, over medium heat, bring to a boil. Let boil until large bubbles form on the surface, 3 to 4 minutes. Cover with foil and boil 5 minutes longer.
- Add the pieces of butter and continue cooking, uncovered, over medium heat until temperature reaches 300 degrees F on a candy thermometer, about 30 minutes. (The candy thermometer has a clip on the side that can be slid up or down. If desired, you can fit the thermometer on the side of the pan, making sure that it rests in the mixture, not on the bottom of the pan, so that the reading is accurate.) Remove from heat and immediately add the salt, baking soda, and 1 cup of chopped nuts. Stir with a wooden spoon until well combined.
- Pour the toffee mixture on the oiled baking tray and, using the offset spatula, spread the mixture out, making a block about 10 by 13 inches. The toffee will thicken very quickly, so work as fast as you can. When cool, blot some of the oil or vegetable spray with a clean towel.
- While the toffee mixture is cooling, melt the chocolate in a medium heatproof bowl placed over simmering water. When almost melted, turn off heat and let the chocolate continue to melt, stirring occasionally. Keep warm.
- When you can lift up the block of toffee, transfer it to a flat work surface or to a clean baking tray. - Line a 9-by 9-inch baking pan with aluminum foil, allowing some extra at each end.
- Grease and flour the foil.
- Toast the almond pieces in a frying pan over medium-low heat, stirring frequently, until they begin to color and become fragrant, about 7 minutes.
- Pour them out of the pan and set aside.
- Chop the toffee bars into 1/2-inch pieces (if using snack-size bars, chop them in half).
- Sift together the flour, baking powder and salt.
- In the large bowl of an electric mixer, combine the melted butter and brown sugar, breaking up any hard lumps of brown sugar.
- Beat in the egg, vanilla and almond extract.
- Beat in the flour mixture.
- Combine the toasted almonds, chopped toffee bars and chocolate chips, mixing well, then stir the mixture into the batter, stirring to coat all the mix-ins.
- Scrape the batter into the prepared pan and spread it evenly.

- Preheat oven to 350F. Line a heavy 9 X 13 baking pan with parchment paper. Leave extra at ends to lift out squares when baked. BASE: Pulse sugar, flour and salt in food processor. Add 3/4 cup cold butter and pulse until butter is in small bits but not completely blended - as you would with pastry. Press into prepared pan. Bake at 350F for 12-15 minutes, or until evenly golden. Cool pan on wire rack while preparing filling. FILLING: Melt 1/4 cup butter in heavy saucepan over medium heat. - 1. Preheat oven to 350 degrees F. Cover a cooking sheet with aluminum foil. Place graham crackers in a layer on the sheet, without overlapping. (They should fit perfectly, but you might have to turn some of them sideways.) NOTE: If you break the crackers into squares at this point, it will make it easier to cut them later. I figured this out AFTER I made them. =^..^=
- 2. Sprinkle the graham crackers with toffee bits...
- 3. ...then nuts. (This is when you could also sprinkle a few Rice Krispies, too, if you want.)
- 4. In a small pan, melt butter & sugar together over medium-high heat, NOT STIRRING. (This is important!) You can swirl the mixture in the pan occasionally. When the mixture starts to boil, REDUCE heat and cook at a rapid simmer for 2 minutes, swirling occasionally.
- 5. Once the butter & sugar mixture is syrupy, remove from the heat and immediately pour over the graham crackers.
- 6. Bake in the oven for about 10-12 minutes, until the syrup is bubbling.
- 7. Remove the pan from the oven & place on a wire rack. Immediately sprinkle chocolate chips (and/or butterscotch chips) over the graham crackers. (NOTE: I used the entire bag of chocolate chips but it was, and I don't say this often, too much chocolate for me. So I've listed a smaller amount in the ingredients section. But suit yourself, as I always encourage!)
- 8. NOTE: You can leave the chocolate chips as they are or spread the chocolate with a knife, if you want, after waiting a few minutes until the chocolate chips soften. You could also add the raisins or craisins before spreading the chips.
- 9. Sprinkle with coarse salt. (I actually do this with my fingers to make sure it all doesn't end up in one spot!) It doesn't take much!
- 10. Cut the bars into 2 inch squares with a pizza cutter or sharp knife. If you broke the graham crackers up into squares early, this will be REALLY easy!
- 11. Cool completely on the cookie sheet, but I usually put them in the refrigerator to set the chocolate once they finally cool enough to do so.
- 12. Carefully peel the aluminum foil from the backs of the bars. (Don't ask me how I know this!) Store in an airtight container for up to a week.

- Preheat oven to 350*F and position the rack in the center of the oven.
- Spray a 7x10.75 inch nonstick baking pan. Lay a piece of parchment paper, making sure the side overhang quite a bit, so you can just pull on the sides to take the bars out. Spray the parchement paper.
- In a medium bowl, combine the cookie dough, 1/2 of the chopped chocolate-toffee candy pieces and vanilla extract.
- Using damp fingers, gently press the dough into the prepared pan.
- Using a fork, prick the dough all over. Bake for 12 to 14 minutes until the crust is lightly browned. Cool for 15 minutes.
- Place the chocolate chips and vegetable oil in a medium bowl.
- Place the bowl over a pan of simmering water and stir until the chocolate has melted.
- Cool the chocolate mixture for 10 minutes.
- Whisk in the mascarpone cheese until the mixture is smooth.
- Using a spatula, spread the chocolate mixture over the cooled crust.
- Sprinkle the remaining chocolate-toffee candy pieces and sliced almonds over the chocolate mixture.
- Refrigerate for at least 2 hours until the chocolate layer is firm.
- Peel off the parchment paper and cut into 1 1/2 by 2-inch bars. Serve at room temperature.

CHOCOLATE TOFFEE GRAHAM BARS
These defy description - are they a bar cookie? Or are they candy? Either way they are delicious, very very easy to make. I always make these at holiday time and I also make a big three batch amount to donate to my church's "cookie walk" at our holiday fair. Of course everyone LOVES them. I got this recipe years ago - one of my first years of teaching from a regular substitute teacher who brought them in to share.

Steps:
- In an 11 by 17 inch jelly roll pan, lightly greased, place whole graham crackers side by side.
- I also cut strips to fill in all the open spaces so the whole pan is covered.
- Bring the butter and brown sugar to boil.
- When bubbly add the chopped walnuts or pecans and bring to boil again.
- Pour over graham crackers.
- Bake 350 degrees for 8 minutes.
- Remove from oven and sprinkle with the chocolate chips.
- They wont fully cover the crackers.
- Turn off the oven but put pan back in for a minute or two to help the chips melt.
- Then take the pan out of the oven and spread the chips over the bars with a spatula.
- Sprinkle the colored nonpareils on top of these after spreading the melted chocolate to add a festive look.
- Let the bars cool for 1 hour or so and then cut them into little squares with a sharp knife.
- They might break up a bit when you do this but then it is fun to eat the scraps!
- Keep these in a closed container in the fridge.
RICH CHOCOLATE CHIP TOFFEE BARS
These are soo amazingly delicious, you will not be able to put them down! They are really sweet though so its best to cut them into little chunks.

- Pre-heat oven to 350°F Grease a 13x9x2 baking pan.
- Combine flour and brown sugar in a large bowl.Cut in butter until mixture resembles coarse crumbs.
- Add egg, mix well.Stir in 1 1/2 cups chocolate chips.
- Set aside 1 1/2 cups of the mixture.
- Press remaining crumb mixture onto bottom of prepared pan. Bake for 10 minutes.
- Pour condensed milk evenly over hot crust.Top with 1 1/2 cups toffee bits and sprinkle reserved crumb mixture and remaining 1/2 cups chips over the top.
- Bake 25-30 minutes, or until golden brown.
- Sprinkle with remaining 1/4 cup toffee bits.
- Cool completely in pan on wire rack. Cut into bars.
Tips:
- Use high-quality chocolate for the best flavor. A semisweet or bittersweet chocolate with a cocoa content of at least 60% is ideal.
- If you don't have a candy thermometer, you can test the toffee by dropping a small amount into a cup of cold water. If the toffee forms a hard ball, it is ready.
- Be careful not to overcook the toffee, or it will become too hard and brittle.
- Line the baking pan with parchment paper to make it easy to remove the toffee bars.
- Allow the toffee bars to cool completely before cutting them into pieces.
