- Place the chopped chocolate in a large bowl. In a saucepan, bring the cream to a simmer over medium-high heat. Quickly pour the hot cream over the chocolate and let sit for 1 minute; then whisk together until the chocolate is melted. Whisk in the mascarpone, then strain into a bowl big enough to whip the mixture in the next day. Cover and refrigerate at least 6 hours or overnight.
- Remove the chocolate mixture from the refrigerator and whip until fluffy and slightly stiffened, being careful not to overwhip (like heavy cream, the mixture can turn to butter if whipped too long). Refrigerate.
- Combine the espresso and coffee liqueur in a shallow dish. (I wear rubber gloves for the next step to keep my fingers from getting stained). Pick up 1 ladyfinger, then place it in the espresso for just as long as it takes you to pick up the next 1 and place it in the espresso (about 10 seconds). Fish the first 1 out and place it in the bottom of a 9 by 13-inch baking dish. Repeat with the remaining ladyfingers, arranging them in rows in the bottom of the dish and continuously adding and removing the ladyfingers from the espresso mixture. (This will allow them to soak for the perfect amount of time without getting soggy--they should be wet on the outside but still have an unsoaked core at the center.)
- When you have made a complete layer of ladyfingers, spread half of the chocolate mixture over the ladyfingers and cover lightly with some of the chocolate shavings. Repeat, making 1 more complete layer of ladyfingers, chocolate, and shavings. Cover and refrigerate until ready to serve, at least 2 hours.

- To make the mousse, combine the chocolate and cream in a heatproof bowl and place in the microwave and cook on high heat for 45 seconds. Stir until chocolate is melted and the mixture is smooth and shiny.
- In a large mixing bowl, beat the cream cheese, mascarpone and chocolate mixture with an electric mixer at medium to medium-high speed until soft and creamy. Pause occasionally to scrape down the sides of the bowl.
- In another bowl, with clean beaters, whip the egg yolks and sugar until frothy, about 30 seconds on high. With a rubber spatula or wooden spoon, gently fold the egg mixture into the chocolate-cream cheese mixture until blended. Cover the mousse and refrigerate until ready to assemble the tiramisu. (You should have about 2 cups mousse. The mousse may be made ahead, covered, and refrigerated for up to 1 day.)
- To make the zabaglione, prepare an ice water bath. Combine the yolks, rum, Marsala and 1/2 cup sugar in the top of a double boiler. Place over (not touching) barely simmering water in the lower pan and whisk vigorously, or beat with an electric mixer, until the mixture begins to foam. Whisk continuously until the mixture triples in volume and thickens to form soft mounds when the whisk is lifted, about 7 minutes. Immediately place the top of the double boiler in the ice water bath to stop the cooking. Let cool, stirring occasionally.
- In a small bowl, beat the 1/2 cup heavy cream until it begins to foam. Add the remaining 2 teaspoons sugar and continue to beat until the cream holds soft peaks. - To assemble the dessert, in a small bowl or pitcher, add the sugar to the hot espresso. Stir well to dissolve the sugar, then add the rum.
- Cut off the top of the cake and reserve for another use (see Chef's Note). Cut the cake in half horizontally. Arrange a layer of cake, cut side up, in the bottom of a deep 2 1/2-quart bowl. These individual tiramisu look super-elegant served in large stemmed wine goblets - but you could also use individual serving bowls, as long as they're deep enough. To make the tiramisu a day ahead, leave out the strawberry slices in between the layers. Sprinkle the raspberries over the top just before serving.

- To make the white chocolate cream: heat the milk over low-medium heat until bubbles form around the edges of the saucepan. Place the white chocolate pieces in a small bowl and pour the hot milk over. Whisk until the chocolate is completely melted.
- Meanwhile, in a medium bowl, whisk the sugar into the mascarpone. Set aside. In a small, chilled bowl, whip the cream with the vanilla until soft peaks form (do not overbeat.) Whisk the white chocolate mixture into the mascarpone. Fold in the whipped cream. The texture should be like lightly whipped cream; if it doesn't "flow", thin the mixture slightly by stirring in some milk, 1 tablespoon at a time.
- Spoon the liqueur evenly over the cake slices. Place 1 slice of cake in the bottom of each goblet. Spoon half of the cream mixture over the cake slices (about 2 1/2 tablespoons for each slice.) Sprinkle each with 1/2 tablespoon of the grated chocolate. Slice 8 strawberries and place some slices over the chocolate in each goblet. Repeat the cake, cream and chocolate layers. Refrigerate for 4 to 8 hours.
- To make the chocolate leaves: line a plate with waxed paper. In a double boiler over low heat, melt the grated semisweet chocolate. Remove the chocolate from the heat. Using a pastry brush, spread the underside of each leaf with a layer of chocolate. Place the painted leaves, chocolate side up, on the prepared plate. Freeze until the chocolate is set. Carefully peel the leaf off the chocolate, handling the chocolate leaf as little as possible. Return the leaves to the freezer if the chocolate is melting.
- Just before serving, top each tiramisu with raspberries and garnish each with a strawberry half and chocolate leaves.
STRAWBERRY WHITE CHOCOLATE TIRAMISU
Steps:
- 1. Melt the white chocolate and 1/4 cup of heavy cream over hot (not boiling) water, stirring until smooth; cool completely. 2. In a large mixer bowl, beat cream cheese until fluffy.Stir in melted white morsels mixture. 3. In a small mixer bowl, beat remaining 1 1/4 cup heavy cream until stiff peaks form; fold into cream cheese mixture. 4. Line side of 9 x 3 inch springform pan with ladyfinger halves, cut sides in. Arrange half of remaining lady fingers on bottom of pan. 5. In small bowl, combine coffee& brandy; brush half over ladyfingers in bottom of pan. 6. Cover with half the cream cheese filling and with 1/2 of the sliced strawberries. 7. Repeat with ladyfingers, coffee mixture and remaining cream cheese mixture. 8. Top with the remaining strawberries; arranged attractively on top. 9. Cover; refrigerate until set, 4 hours or overnight. 10. Remove side of pan before serving.
QUICK CHOCOLATE COFFEE TORTE (AKA FAKE TIRAMISU)
I wanted to try my mom's homemade kahlua in a dessert, but honestly didn't expect it to come out. Now it's a family favorite!

- Gather all ingredients! This recipe goes so quickly that you really need everything within arm's reach.
- If your poundcake comes from the freezer aisle, go ahead and defrost it according to the package.
- Cut poundcake into 1"-2" cubes.
- Set poundcake cubes on a plate or in a bowl and drench with that coffee liqueur! (I typically use more than 1 cup, but adjust according to taste).
- While poundcake is getting drunk, take this time to make that box of instant pudding mix. Just like the package says, stir the mix into 2 cups cold water with a wire wisk.
- Now, as the pudding begins to set, I like to add the dutch process cocoa (any unflavored cocoa powder will work), and then the amaretto. If you add the amaretto, MAKE SURE you don't add it directly to the milk--the alcohol might curdle the milk!
- Set your setting pudding aside to set, and mix the graham crackers and ginger snaps. I use a food processor for this, but a blender or even a meat tenderizer and a plastic bag will work. (at this point I also check the poundcake and add a little more liqueur if it looks dry).
- Now for that last beautiful step! Line the bottom of a casserole (a large bowl also works) with half of the cookie crumbs. Pour/spoon/scoop half of your pudding in over the cookie crumbs and carefully spread to cover the crumbs. Place (or dump) your poundcake into the casserole, making sure to press it down into the pudding. Don't be afraid to leave out whatever doesn't fit, or to tear the poundcake cubes in half to fill up gaps. Cover the poundcake with the rest of your pudding, spread it nicely, and finish with the rest of the crumbs, also spread nicely. You're done!
- Now cover and refrigerate for at least three hours before serving. This gives the alcohol time to disperse within your torte, and lets the pudding get nice and firm.
- Enjoy with friends and family!
- Take an aspirin with a glass of water and call me in the morning. Hey, this stuff's pretty potent! ^_^.
CHOCOLATE-ESPRESSO TIRAMISU
Timing does not include the 24 hours needed to chill. You could sub in boughten ladyfingers-split, if you prefer. I prefer using amaretti biscuits myself. I appreciate that this can be portioned into pudding cups and frozen-perfect when cooking for 2! I use regular coffee--I put a half scoop into small bowl with 1 cup water, cover it with wax paper (or it really messes up your microwave --I can vouch for that--lol!!) then nuke for about 2 minutes-- strain through coffee filter.

- Biscuit-Allow egg to stand at room temperature for 30 minutes.
- Meanwhile, grease a 9 X 9 inch baking dish, preheat oven to 350 degrees.
- Line the bottom of baking pan with parchment paper, grease and flour paper; set aside.
- In a small bowl, stir together the flour, cocoa, baking powder, and salt.
- In a medium bowl, beat egg with an electric mixer on high speed about 3 minutes or until thick and lemon colored.
- Gradually add sugar, beating on medium speed for 4 minutes or until light and fluffy.
- Add the flour mixture; beat on low to medium speed JUST until combined.
- In a small saucepan, combine milk and butter; heat and stir until butter melts; add to batter along with vanilla, beating until combined.
- Pour batter into prepared pan.
- Bake about 15 minutes or until a wooden toothpick inserted near the center comes out clean.
- Cool biscuit in pan on a wire rack for 10 minutes.
- Loosen sides from pan and turn out onto a kitchen towel sprinkled with cocoa powder.
- Carefully remove paper; discard.
- Cool COMPLETELY, about 25 minutes.
- Pudding:.
- Chill large metal bowl and whipping beater in freezer.
- Optional-Place bittersweet chocolate in a small microwave safe bowl, microwave, uncovered, on 50 percent power (medium) about 1 minute or until chocolate is melted and smooth, stirring every 15 seconds-set aside to COOL about 15 minutes. Careful as you don't want it to harden up again.
- Beat inmascarpone, vanilla, and OPTIONAL cooled chocolate with an electric mixer on medium speed until soft peaks form, about 2 to 3 minutes.
- Set up chilled metal bowl and whipping beater, whip whipping cream and powdered sugar until soft peaks form, then gently FOLD (not beat it in or it will be dense) the whipping cream mixture into the mascarpone mixture.
- Put Kahlua and espresso into a shallow dish.
- Cut cooled biscuit into 16 pieces.
- Dip 8 pieces QUICKLY into the coffee mixture one at a time (if you saturate them too much you will have a soggy mess) and arrange side by side, in a serving dish-about 1 quart size or you could use pudding cups.
- Cover biscuit with HALF the mascarpone mixture.
- Top with remaining biscuit, and remaining mascarpone mixture.
- Dust top with cocoa, chocolate shavings, or chocolate covered coffee beans,.
- Refrigerate 24 hours, or FREEZE.
STRAWBERRY CHOCOLATE TIRAMISU
-Created for Ready Set Cook #12 (Summer 2008). This is a combination of a traditional tiramisu and one that is decidedly not traditional! Be sure to use the soft variety of ladyfingers. Cook time is chilling time.

- In a large bowl, combine the mascarpone, sugar, and chocolate syrup, until mixture is light and fluffy. This can be done with a mixer or a wooden spoon (I use a spoon). Gently stir in the whipped topping, being careful not to deflate it too much.
- Place one half of the ladyfinger halves on the bottom of a 9-inch springform pan, tearing some to cover the bottom of the pan as much as possible (you may have one or two leftover).

- In small/medium bowl, mix filling ingredients well with whisk, chill in fridge.
- Prepare coffee and espresso, pour into small bowl, and add extracts and Splenda, stir well. *Taste for sweetness, add more Splenda if desired.

- 1. Mix (on medium speed) first set of ingredients for cookies in large bowl. I mix wet ingredients, then add the dry. Becare in adding the hot coffee, it may splatter.
