CHOCOLATE SWIRL COFFEE CAKE

We loved this cake because the cocoa wasn't too sweet and balanced out the sweeter coffee cake. So yummy fresh from the oven with a pat of butter!

Time 45m

Number Of Ingredients 8

3/4 c sugar
1/2 c butter
2 eggs
1 1/2 c flour
2 tsp baking powder
2/3 c milk
1/2 c cocoa powder, unsweetened
3-4 Tbsp sugar

Steps:

  • 1. Preheat oven to 350 and grease a 9x9x2 baking pan. Mix cocoa powder and the 3 T of sugar together in a bowl, set aside.
  • 2. In a large bowl, cream together sugar and butter until fluffy. Add eggs one at a time, beating after each addition.
  • 3. In another bowl, combine flour and baking powder. In one more bowl, combine milk and vanilla extract. Alternate between adding about 1/3 of the flour mixture and 1/3 of the milk to the butter/sugar mixture until everything is completely combined.
  • 4. Pour about one third of the batter into the prepared pan. Sprinkle about half of the cocoa/sugar mixture on top. Pour another third of the batter in the pan, top with the rest of the cocoa mixture, finish by layering in the final third of the batter.
  • 5. Bake for 25-30 minutes or until the cake tests done with a toothpick.

CHOCOLATE SWIRL COFFEE CAKE

Chocolate Swirl Coffee Cake image

From an old Betty Crocker cookbook. I changed it just a bit. I chopped the nuts finer so they do not burn on the tips and it needs to cook a bit longer than the recipe states. You cut in the chocolate to get a swirling effect. Yummy.

Time 50m

Number Of Ingredients 10

2 cups baking mix
1/4 cup sugar
1 egg
3/4 cups milk
2 tbs melted butter
1/3 cup semisweet chocolate pieces, melted
1/3 cup flaked coconut
14 cup chopped nuts
1/4 cup sugar
1 tbs melted butter

Steps:

  • 1. Preheat oven to 400 Degrees. Grease a square baking pan.
  • 2. For the cake, mix together the baking mix, 1/4 cup sugar, 2 tbs melted butter, egg and milk. Spread in pan.
  • 3. Melt the chocolate and spoon it over the batter. Use a knife to cut through the batter several times to create the swirl effect.
  • 4. For the topping mix the nuts, coconut, 1/4 cup sugar and 1 tbs melted butter. Sprinkle over the top of cake.
  • 5. Bake at 400 degrees for 20 minutes. This is the instruction on the original recipe but I find this doesn't usually work well. It usually is not done at this point and I turn it down to 350 and bake another 10 to 15 minutes until it's done. Turning it down helps to keep the topping from getting too brown.

Tips:

  • Begin with softened butter and cream cheese: This crucial step ensures that ingredients blend smoothly and evenly, resulting in a creamy and homogeneous batter.
  • Sift flour and baking powder together: Sifting aerates the mixture, yielding a lighter and fluffier cake texture.
  • Use dark chocolate or cocoa powder: These ingredients impart more intense chocolate flavor compared to milk chocolate or regular cocoa powder.
  • Don't overmix the batter: Overmixing can lead to a tough and dense cake. Mix just until the ingredients are combined.
  • Create a distinct swirl pattern: To achieve a dramatic chocolate swirl, spoon some batter into the pan, then top with chocolate mixture, and finally more batter. Use a knife or toothpick to create swirling patterns.
  • Bake at the right temperature and duration: Follow the recipe's baking instructions precisely. The cake is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.

Conclusion:

Enjoy a delightful and indulgent treat with this chocolate swirl coffee cake recipe. Its combination of rich coffee cake batter, luscious chocolate swirls, and sweet crumb topping makes it an irresistible choice for breakfast, brunch, or afternoon tea. The tips provided in this summary will help you achieve a perfectly moist and flavorful cake with a stunning chocolate swirl that will impress your taste buds and leave you craving more.
