Time 1h10m

Yield 8 servings

Number Of Ingredients 9

1 1/4 cups sugar, plus more for sprinkling
3/4 cup (1 1/2 sticks) butter, at room temperature
1 large egg
1 cup smooth peanut butter
1 teaspoon pure vanilla extract
1/2 teaspoon fine salt
1/2 teaspoon baking soda
1 1/2 cups all-purpose flour (see Cook's Note)
Jam, for serving

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Butter the bottom and sides of a 10-inch cast-iron skillet with 1 tablespoon of the butter. Beat the remaining butter and sugar together in a large bowl with an electric mixer on medium speed until light and fluffy, scraping down the bowl as needed. Add the egg, peanut butter and vanilla and beat until smooth and creamy. Add the salt and baking soda and beat until combined. Reduce speed to low and gradually add the flour, mixing until the dough comes together and is smooth.
  • Use a rubber spatula to scrape the dough into the prepared skillet, gently spreading it to the edges and smoothing the top. Make a crosshatch pattern on the surface of the dough with the corner tip of the rubber spatula. Sprinkle the top with sugar.
  • Bake until the edges are brown and crisp and the center is still soft, 40 to 45 minutes. Cool on a wire rack for 30 minutes (the cookie will firm as it cools). Warm the jam in the microwave, about 45 seconds. Slice the cookie into wedges and serve with the warm jam.

Tips:

  • To ensure perfect peanut butter-chocolate filling, use creamy peanut butter and solid chocolate; otherwise, your filling might end up too runny.
  • Microwave peanut butter for 30 seconds to make it easy to work with.
  • To make the chocolate filling more decadent and rich, try using dark chocolate instead of semi-sweet.
  • Feel free to top your cookie with additional chopped nuts, chocolate chips, or even a scoop of ice cream for an indulgent dessert experience!
  • For the best results, use a 12-inch skillet; a smaller skillet will make the cookie too thick, while a larger one will make it too thin and crispy.
  • Let the cookie cool completely before slicing and serving; this will help the chocolate filling set and prevent it from oozing out.

Conclusion:

This mouthwatering skillet cookie is a gourmet treat that combines the classic flavors of chocolate and peanut butter into one delectable dessert. With its soft, chewy center and perfectly gooey filling, this cookie is sure to be a hit with dessert lovers of all ages. Whether you're hosting a special occasion or simply craving a sweet treat, this skillet cookie is a delightful and easy-to-make option that will satisfy your cravings and leave you wanting more.
