CHOCOLATE STOUT CUPCAKES

I love cooking with beer and there's no exception when it comes to desserts. Of all beers, stout is the perfect one for desserts because of its distinct chocolate and coffee notes. Pairing it with actual chocolate is the obvious choice. These cupcakes are light in texture but heavy in the chocolate department. The white cream cheese icing reminds me of the creamy white head that Guinness is famous for.

Time 40m

Yield 24 cupcakes

Number Of Ingredients 13

3/4 cup unsweetened cocoa, plus more for dusting finished cupcakes
2 cups sugar
2 cups all-purpose flour
1 teaspoon baking soda
Pinch fine salt
1 bottle stout beer (recommended: Guinness)
1 stick butter, melted
1 tablespoon vanilla extract
3 large eggs
3/4 cup sour cream
1 (8-ounce) package cream cheese, softened at room temperature
3/4 to 1 cup heavy cream
1 (1-pound) box confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, whisk together the cocoa, sugar, flour, baking soda, and salt.
  • In another medium mixing bowl, combine the stout, melted butter, and vanilla. Beat in eggs, 1 at time. Mix in sour cream until thoroughly combined and smooth. Gradually mix the dry ingredients into the wet mixture.
  • Lightly grease 24 muffin tins. Divide the batter equally between muffin tins, filling each 3/4 full. Bake for about 12 minutes and then rotate the pans. Bake another 12 to 13 minutes until risen, nicely domed, and set in the middle but still soft and tender. Cool before turning out.
  • To make the icing: In a medium bowl with a hand mixer, beat the cream cheese on medium speed until light and fluffy. Gradually beat in the heavy cream. On low speed, slowly mix in the confectioners' sugar until incorporated and smooth. Cover with plastic wrap and refrigerate until ready to use. Icing can be made several hours ahead and kept covered and chilled.
  • Top each cupcake with a heap of frosting and dust with cocoa.

CLASSIC EGG CREAM

Categories     beverage

Time 1h5m

Yield 1 serving

Number Of Ingredients 3

1 cup whole milk
1/4 cup chocolate syrup, classic fountain style, such as U-Bet
1 cup seltzer (old-fashioned-style seltzer in a small glass bottle works best)

Steps:

  • Pour the milk into a freezer-proof container and freeze until the milk begins to freeze a little, 40 minutes to 1 hour. It should not be frozen solid, but have milk ice floating on top and attached to the sides. The colder it is, the better your egg cream will come out.
  • Spoon the chocolate syrup into the bottom of a tall 10-ounce glass. Pour in the milk (it should only come about halfway up to leave room for the seltzer). Slide a long spoon into the glass, and then bounce the spoon up and down and stir just slightly to agitate the chocolate syrup at the bottom of the glass. Pour in the seltzer water while continuing the bounce the spoon. This method combines the syrup and seltzer and creates the frothy milk on top. The more you bounce the more bubbles you'll get. This is the old school method, and how those fountain shops got that amazing froth on top. If it's not working for you - abandon ship and use an electric frother or a blender. It will still be delicious!

Tips:

  • Use good quality stout and chocolate ice cream. This will make a big difference in the flavor of your affogato.
  • Don't over-steep the stout in the coffee. This will make the affogato too bitter.
  • Add a dollop of whipped cream or a scoop of vanilla ice cream for an extra creamy treat.
  • Garnish with shaved chocolate or cocoa powder.
  • Serve immediately. Affogato is best enjoyed fresh.

Conclusion:

Chocolate stout affogato is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be tailored to your own taste. Whether you like it simple or decadent, there is an affogato recipe out there for you. So next time you are looking for a sweet treat, give chocolate stout affogato a try. You won't be disappointed.
