8 whole graham crackers, broken into 1-inch pieces
3 tablespoons granulated sugar
5 tablespoons unsalted butter, melted and cooled
9 ounces semisweet chocolate, chopped
2 tablespoons unsalted butter, diced
2/3 cup heavy cream
1 cup (8 ounces) egg whites, about 8 eggs
1 ¾ cups (12 ounces) granulated sugar
1/4 teaspoon table salt
¼ teaspoon cream of tartar
½ teaspoon vanilla extract

Steps:

  • Adjust an oven rack to the center position and heat oven to 325 degrees. Process crackers in a food processor until fine crumbs form, about 30 seconds. Add sugar and melted butter over top and pulse to incorporate until the crumbs come together, about 5 pulses.
  • Pour mixture into a pie plate and evenly press crumbs on the bottom and up the sides of the pie plate with the bottom of a measuring cup. Bake for 18 to 20 minutes or until browned and fragrant. Transfer crust to a wire rack to cool completely.
  • Place chocolate and butter in a heatproof bowl.
  • In a small saucepan, bring the cream to a simmer over medium-low heat. Pour the cream over chocolate and butter and let stand for 30 seconds. Whisk cream, chocolate and butter to combine until completely melted and smooth.
  • Pour the ganache into the cooled pie crust. Smooth the top out with an offset spatula and store in a cake container. Alternatively, loosely cover with plastic wrap, being sure the plastic does not touch the surface of the ganache. Let stand at room temperature for 4 hours or overnight.
  • In the bowl of a stand mixer, whisk together egg whites, sugar, salt, cream of tartar and vanilla extract by hand. Place mixer bowl on top of a saucepan with a few inches of simmering water, making sure the bottom of the mixer bowl does not touch the water. Attach a thermometer to the mixer bowl and cook until mixture reaches 160 degrees, whisking frequently, about 15 minutes.
  • Carefully transfer mixer bowl to the stand mixer with the whisk attachment attached. Whisk mixture on high speed until thick and glossy and egg whites have tripled in volume, about 8 minutes.
  • Pipe or dollop meringue on top of ganache in a decorative fashion. If using Ateco piping tip #827 pipe stars around the entire surface of the chocolate filling. Pipe a second layer of stars around the sides moving inward. As you move inward, pipe large stars going up to give a domed look when looking at the side of the pie.
  • With a kitchen torch, gently toast the topping. If you don't have a kitchen torch, adjust an oven rack to the center position and heat oven to 400 degrees. Bake until the topping had browned, about 6 minutes. You can also use the broiler but be careful as this can burn the meringue quickly.

Steps:

  • Combine the chocolate chips and cream in a large microwave-safe bowl and heat for 2 1/2 minutes. Stir until completely smooth (the chocolate may appear separated at first, but just keep stirring). Pour into the prepared pie crust, loosely cover with plastic wrap and refrigerate until set, about 4 hours or up to overnight.
  • Preheat the broiler.
  • Use kitchen shears to cut each marshmallow in half, on a bias, from one corner to the opposite corner. Arrange the marshmallow halves, cut-side down, on top of the chilled pie. ¼ cup butter, melted
¼ cup white sugar
¼ teaspoon salt
2 cups graham cracker crumbs
1 (14 ounce) can condensed milk
½ cup semisweet chocolate chips

⅛ teaspoon salt
¾ cup white sugar
5 tablespoons cocoa powder
3 tablespoons cornstarch

FILLING:
10 ounces bittersweet chocolate, chopped
1/4 cup butter, cubed
1-1/2 cups heavy whipping cream
TOPPING:
5 large egg whites
1 cup sugar
1/4 teaspoon cream of tartar

Steps:

  • In a small bowl, mix cracker crumbs and sugar; stir in butter. Press onto bottom and 1/2 in. up sides of an ungreased 9-in. fluted tart pan with removable bottom. Refrigerate 30 minutes., Place chocolate and butter in a large bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate and butter; let stand 5 minutes. 1 1/2 cups graham cracker crumbs (1 package, 13 rectangle graham crackers)
2 tablespoons brown sugar
7 tablespoons butter (melted)
1 1/2 cups semisweet or bittersweet chocolate chips or bar chocolate, chopped (see note)
1 cup heavy cream
1/2 teaspoon vanilla extract
1/8 teaspoon coarse (kosher salt (use half the amount, just a pinch, for table salt))
20-25 large marshmallows (cut in half (like a hamburger bun) - see note)

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, combine all the ingredients together in a small bowl and stir until the graham cracker crumbs are evenly moistened. Press the mixture evenly into the bottom and up the sides of a 9-inch pie plate or 9-inch tart pan. Bake for 8-10 minutes until just lightly golden. Remove from the oven and let cool completely.
  • For the filling, add the chocolate to a medium bowl. Heat the cream (in a saucepan or microwave) until it starts to steam and small bubbles form at the edges. The pie can be refrigerated (or left at room temp) for 2-3 hours after the marshmallows have been toasted. Any longer and the marshmallows might get stickier and kind of wet.
  • Slice the pie into pieces with a sharp knife (dip it in hot water and wipe clean between slices for more even cutting) and serve.

1 1/2 cups (201g) graham cracker crumbs (about 11 full sheet graham crackers)
3 tbsp (39g) sugar
1/8 tsp salt
10 tbsp (140g) unsalted butter, melted
5 tbsp cornstarch
1 ¼ cups (259g) sugar
¼ tsp salt
4 large egg yolks
2 cups (480ml) whole milk
½ cup (120ml) heavy cream
6 ounces (169g) semi-sweet chocolate chopped, (70% cocoa)
2 tbsp (28g) butter unsalted
1 tbsp vanilla extract
7 regular sized marshmallows, cut in half
2 1/2 cups mini marshmallows

Steps:

  • Preheat oven to 325 degrees.
  • To make the crust, add the graham cracker crumbs, sugar, and salt to a large bowl and stir to combine.Add the melted butter and stir until well combined and crumbly.Pour the mixture into a 9-inch pie pan and spread the crumbs around so that they are evenly dispersed.Press the crumbs into the bottom and up the sides of the pan.
  • Bake for 8-10 minutes, then set aside to cool.

  • Store the pie well covered in the fridge. You can warm individual slices back up a touch in the oven or microwave, if desired. Be aware that the sticky marshmallows can be tough to cut through. You could also use a meringue topping, if you'd like something that's easier to slice. I'd recommend the topping from this cheesecake.
