CHOCOLATE RASPBERRY COBBLER CAKE

I've had this recipe for so long, I can't even remember where it came from! It is decadently good, though.

Provided by Lisa Maillet

Categories     Chocolate

Time 1h

Number Of Ingredients 9

3/4 c unsalted butter
2 c all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 1/2 c milk
1 tsp vanilla extract
1 1/2 c brown sugar, firmly packed
4 c raspberries, fresh or frozen (no need to thaw if frozen)
1 c semi-sweet chocolate chips or chunks

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Melt the butter in a 9" x 13" baking pan.
  • 3. In a large bowl, mix together the flour, baking powder, salt, milk, vanilla, and brown sugar.
  • 4. Add 3 cups of the raspberries and the chocolate chips.
  • 5. Pour the remaining batter over the berries, then top with the last cup of berries.
  • 6. Place the pan in the oven and bake 35 to 40 minutes or until the center is set. Let cool at least 10 minutes before serving.

Tips:

  • To ensure a perfectly crisp and golden-brown cobbler topping, use a combination of granulated sugar and light brown sugar. Light brown sugar adds a touch of molasses flavor and helps create a slightly chewy texture.
  • For a more intense chocolate flavor, use a combination of unsweetened and semisweet chocolate chips. You can also add a tablespoon of cocoa powder to the dry ingredients for an extra chocolatey kick.
  • Don't overmix the cobbler batter. Overmixing will result in a tough cobbler. Mix just until the ingredients are combined and no dry streaks remain.
  • For a gooey and flavorful raspberry filling, use fresh raspberries. If fresh raspberries are not available, you can use frozen raspberries. Be sure to thaw them before using.
  • Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream. You can also top it with fresh raspberries or a sprinkle of powdered sugar.

Conclusion:

This chocolate raspberry cobbler is a delightful dessert that is perfect for any occasion. It is easy to make and always a hit with family and friends. With its sweet and tart filling, rich chocolate flavor, and crispy topping, this cobbler is sure to satisfy your sweet tooth.
