Cookie base:
1 cup (2 sticks) unsalted butter, room temperature, plus more for dish
1/2 cup (packed) light brown sugar
1/4 cup sugar
1/2 teaspoons fine sea salt
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
Topping:
6 ounces semisweet or bittersweet chocolate or high-quality milk chocolate, finely chopped
1-1 1/2 cups assorted toppings, such as cocoa nibs, crushed candy, toasted chopped almonds and pistachios, lightly toasted coconut, and popcorn
Flaky sea salt (such as Maldon)

Steps:

  • For cookie base:
  • Arrange a rack in middle of oven; preheat to 375°F. Line the bottom and sides of a 13x9x2" metal or glass baking dish with foil, allowing 2" overhang on either side; butter foil in dish.
  • Using an electric mixer at medium speed, beat 1 cup butter in a large bowl until smooth, about 3 minutes. Add both sugars and salt; continue to beat until mixture is light and creamy, about 3 minutes longer. Beat in vanilla, then slowly mix in flour, beating until entirely incorporated (dough will be wet and sticky).
  • Scrape dough into prepared dish. Using your fingertips, spread into a thin, even layer.
  • Bake cookie base until it is golden brown and has begun to puff and crack, about 22 minutes. DO AHEAD: Base can be made 2 days ahead. Let cool completely and store airtight at room temperature.
  • For topping:
  • Preheat oven to 375°F. Scatter chopped chocolate evenly over cookie base and bake just until chocolate is soft and has begun to melt, about 2 minutes. Immediately spread chocolate in an even layer over base.
  • Scatter toppings over warm chocolate; lightly but firmly press into chocolate. Sprinkle with salt. Let cool in dish on a wire rack for 15 minutes. Using foil overhang, lift cookie from dish. Place on rack; let cool until chocolate is set, about 2 hours.
  • Carefully remove foil from cookie and slide onto a cutting board. Cut into bars. DO AHEAD: Crunch Bars can be made 5 days ahead. Store airtight at room temperature.

1 c raisins
1 c chopped walnuts
1 bag(s) semi sweet chocolate chips
3 Tbsp shaved canning wax like para fan ( not needed)
cookie sheet,and wax paper
NOTE
wax gives the clusters a sheen. candy manufacturers use it in their summer candy line,to prevent melting.

Steps:

  • 1. Pour chocolate chips in to microwavable bowl with wax. Heat on high stopping every 30 seconds to stir. When it is all melted nicely. Add your nuts and raisins,and stir well.
  • 2. Take a table spoon and drop spoon fulls of mixture on to wax paper lined,or parchment paper lined baking sheet.
  • 3. refrigerate until solid. I keep mine in the fridge in a plastic container. eat and enjoy.

  • Line an 8x8-inch square baking pan with foil or parchment paper. Set aside.

2 cups sugar
1 cup water
8 ounces bittersweet chocolate chips or chopped bar chocolate
3 tablespoons simple syrup
1 1/2 to 2 cups raisins
1 tablespoon water

Steps:

  • For the simple syrup: In a saucepan bring 2 cups sugar and 1 cup water to a boil, stirring, and boil until sugar is completely dissolved. Cool syrup.
  • For the Raisin-oni: Combine chocolate and simple syrup in a heat-proof bowl. Microwave for 1 minute 15 seconds, remove from microwave and stir to smooth consistency. Add raisins and 1 tablespoon water to the bowl and mix to completely cover all raisins. Using a spoon or small ice-cream scoop, scoop out raisins into clusters onto a waxed paper lined sheet pan. Once all RAISIN-ONI are formed, cover them with a sheet of waxed paper and plastic wrap, place in refrigerator and chill until firm.

1 large mixing bowl
1 set of measuring cups
1 set of measuring spoons
1 sifter
1 wooden spoon
2 teaspoons
1 cookie sheet
1 spatula
2 potholders
1 wire cooling rack
aluminum foil
1 stick of butter, plus 1 or 2 teaspoons for greasing the cookie sheet
1 cup sugar
2 eggs
1 cups all-purpose flour
2/3 cup cocoa
2 teaspoons baking powder
1/2 teaspoon salt
1 cup raisins

Steps:

  • Take a stick of butter out of the refrigerator, open the wrapping and leave the butter on the kitchen counter until it gets pretty soft - allow at least 30 minutes.
  • When the butter is soft, wash your hands and put on an apron.
  • Put the butter in the bowl, and beat it with the wooden spoon until it gets creamy. Beat in the sugar until it is thoroughly mixed.
  • Crack open both eggs, and put them into the bowl that has the butter and sugar in it. Be careful not to get any bits of eggshell in the bowl. Beat the eggs with the butter and sugar until they are all mixed in.
  • Take the sifter, and put these ingredients into it: the flour, the cocoa, the baking powder and the salt.
  • Sift them into the bowl with the butter, sugar and eggs. Slowly mix everything together with the wooden spoon until it becomes brown and gooey. Then mix in the raisins.
  • Have an adult turn on the oven for you and set it to 350 degrees.
  • Wrap your cookie sheet with a piece of aluminum foil, keeping it nice and smooth. Smear the remaining 1 or 2 teaspoons butter all over the foil. Scoop up a teaspoon of the batter. Now, take the second teaspoon and use it to push the batter off onto the cookie sheet. Keep doing this until you have formed about 18 cookies, leaving about 2 inches of space space between the cookies. Don't worry that you have batter left over. You can make another batch of cookies.
  • Have an adult help you put the cookie sheet into the oven. Let the cookies bake for 15 minutes - the tops will no longer look shiny. Have an adult take the cookies out of the oven and help you slide them off the cookie sheet with the spatula and put them on the wire rack. Let them cool while you make another batch of the cookies with the rest of the batter.
