PUDDING MIX:
1 cup nonfat dry milk powder
2/3 cup sugar
6 tablespoons cornstarch
1/3 cup baking cocoa
1/4 teaspoon salt
PUDDING:
1/2 cup water
1/4 cup Pudding Mix (above)
2 teaspoons butter
1/4 teaspoon almond or vanilla extract
Whipped topping and baking cocoa, optional

Steps:

  • Combine mix ingredients; store in an airtight container or resealable plastic bag. Yield: 1-3/4 cups mix (7 batches of pudding)., To make pudding: Combine water and mix in a small saucepan; bring to a boil over medium heat, stirring occasionally. Cook and stir for 2 minutes. Remove from the heat; stir in butter and extract. Pour into a serving dish. Serve warm or chilled; top with whipped topping and sprinkle with cocoa if desired.

7/8 c corn starch (that is 1 cup minus 2 tablespoons)
1 1/2 c sugar
3/4 c cocoa powder
1/4 tsp salt slightly rounded

Steps:

  • 1. Combine all the dry ingredients and store in an airtight container. The mix fits in a quart jar.

1/4 c flour
6 Tbsp sugar
4 Tbsp cocoa powder
2/3 c dry powdered milk
dash of salt
TO MAKE PUDDING, ADD:
2 c water
2 Tbsp butter
1 tsp vanilla extract

Steps:

  • 1. Mix all dry ingredients well. Store in a tightly sealed plastic bag til needed, then put in saucepan; slowly add water and butter. Blend well over low heat.
  • 2. Stir over low-medium heat until mixture thickens, and boiling begins. Add the 1 teaspoon vanilla. Serve warm or cold.

  • For a richer pudding, use whole milk instead of low-fat or skim milk.
