CHOCOLATE ALMOND BUTTER PROTEIN BALLS
I started making these protein energy balls when my doctor said I had low blood sugar and needed to add more protein to my diet. A great afternoon pick-me-up for kids and adults. You can take them to your gluten-free and raw friend's parties.

Steps:
- Melt coconut oil in a small skillet over medium-high heat. Add rice flour; cook and stir until toasted, 3 to 5 minutes. Add chocolate and stir until just melted. Remove from heat.
- Place sesame seeds in a small soup bowl.
- Place almond butter, hemp seeds, cocoa powder, protein powder, honey, and salt in another bowl. Stir with a stiff silicone spatula. Add the rice flour mixture and stir to combine.

Tips:
- Use a food processor to grind the oats. This will create a fine powder that will help the balls hold together.
- If the mixture is too dry, add a little bit of almond milk or water. You want the mixture to be moist enough to hold together, but not too wet.
- Roll the balls in cocoa powder or chopped nuts before serving. This will add a little extra flavor and texture.
- Store the balls in an airtight container in the refrigerator for up to a week.
Conclusion:
These chocolate protein balls are a delicious and healthy snack that is perfect for on-the-go. They are made with simple, wholesome ingredients and are packed with protein, fiber, and healthy fats.
