This is a bit of an unusual cake, but great for Christmas. The chocolate mixed with raisins, applesauce, and spices gives a nice texture with a lot less work than plum pudding itself.

Tips:

  • Use ripe plums. Ripe plums are sweeter and have a more intense flavor than unripe plums. They will also be easier to peel and pit.
  • Peel and pit the plums before using them. This will make it easier to incorporate them into the cake batter.
  • Use a food processor or blender to chop the plums. This will help to create a smooth batter.
  • Add the plums to the cake batter just before baking. This will prevent them from sinking to the bottom of the cake.
  • Bake the cake until a toothpick inserted into the center comes out clean. This will ensure that the cake is cooked through.
