CHOCOLATE PEPPERMINT COOKIES

Chocolate Peppermint Cookies image

This recipe reminds me of eating candy canes, fudge and brownies during the holidays. That's why it's one of my favorites. Sometimes I even crush a candy cane and sprinkle it over the top before the glaze sets. Most of the time I ignore the measurement for the mint and just add as much as I like. This way everyone can add their own personal touch to these cookies.

Tips:

  • Use good quality chocolate. The better the chocolate, the better the cookie will taste. Look for a chocolate with a high cocoa content (at least 70%).
  • Don't overmix the batter. Overmixing the batter will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a high temperature. This will help the cookies get a crispy exterior and a gooey interior.
  • Don't overbake the cookies. Overbaking the cookies will make them dry and crumbly. Bake them just until the edges are golden brown and the center is set.
  • Top the cookies with your favorite toppings. You can top the cookies with crushed candy canes, chocolate chips, or even a scoop of ice cream.
