MACKINAC ISLAND CHOCOLATE BUTTER PECAN FUDGE
One of my favorite places to visit every summer is Mackinac Island. Two of my favorite things to do while on the island is ride my bike around the perimeter of the island and then walk through town going in and out of all of the fudge shops looking for free samples. I'm so happy I found this recipe so I can make my own fudge between visits up north. I bought this recipe booklet called Mackinac Fudge Recipes for my cookbook swap partner. I hope she doesn't mind me posting a few of the recipes here on Zaar.

WHITE CHOCOLATE, COCONUT, PECAN FUDGE
This Fudge was something I have been pondering on trying..I whipped some up, and in my daughters words.."You Rock Mom"..it's not an overpowering coconut flavor...just right..and so pretty.. I used Ghiradelli white chocolate chips, pecans, and coconut extract..what a delicious combination!

Steps:
- Butter an 8-inch square baking dish, and set it aside.
- Combine all the chocolate and the half-and-half in a medium saucepan, and warm it over low heat, stirring until the chocolate is completely melted. Add the sugar, corn syrup, and salt, and cook to the soft-ball stage (236 degrees to 240 degrees), 15 to 20 minutes. Remove the pan from the heat.
- Add the butter and do not stir. Allow the fudge to sit, undisturbed, until it reaches 120 degrees. Then add the vanilla and the pecans, if using, and beat with a handheld electric mixer until the fudge loses its gloss and starts to thicken but is still warm enough to pour into the prepared baking dish. The fudge will look less like chocolate sauce and more like chocolate frosting.Spread it out evenly in the dish, and let it cool completely. Then cut it into 1-inch cubes.
Tips:
- To ensure a smooth and creamy fudge, use a heavy saucepan and stir constantly while cooking the mixture.
- Do not overcook the fudge, as this can cause it to become grainy.
- To easily chop the pecans, place them in a plastic bag and use a rolling pin to crush them into small pieces.
- For a richer flavor, use dark chocolate or semisweet chocolate chips instead of milk chocolate chips.
- To add a touch of extra sweetness, sprinkle some powdered sugar on top of the fudge before cutting it into squares.
Conclusion:
This chocolate pecan fudge recipe is a delicious and easy-to-make treat that is perfect for any occasion. With its rich chocolate flavor, crunchy pecans, and creamy texture, this fudge is sure to be a hit with everyone who tries it. Whether you are making it for a special occasion or just as a sweet snack, this chocolate pecan fudge is sure to satisfy your sweet tooth. So, put on your apron and get ready to indulge in this delightful treat!
