1/2 cup + 2 teaspoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 teaspoon cinnamon
2 large eggs
1 teaspoon vanilla extract
1/2 cup canola oil
5 ounces plain, non-fat Greek yogurt
1 cup chopped pears, (pear should be ripe, but firm)
2 to 3 medium-thick slices of pear

Steps:

  • Preheat oven to bake at 350 degrees F. Grease a loaf pan with cooking spray and set aside.
  • In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, salt, and cinnamon.
  • In a small mixing bowl, whisk together eggs, vanilla, and oil until smooth. Add the yogurt and whisk again until smooth.
  • Make a well in the dry ingredients and gradually mix in the wet ingredients. Do not overmix. Fold in the chopped pears. Batter will be thick.

1/4 tsp salt
100 g {1/2 cup} unsalted butter
115 g {3/4 cup firmly packed} brown sugar
2 large eggs
1/2 cup applesauce {recipe follows}
2 tsp pure vanilla extract
400 g pears {about 2 cups diced} or 2 large {or 3 small pairs}, chopped
150 g {1 cup} dark chocolate chips

Steps:

  • Preheat the oven to 180C. Lightly butter a (9 X 5 X 3 loaf pan. Line the bottom with parchment paper. Sift together the plain flour, baking powder and salt. Reserve. With an electric beater, whisk the butter and brown sugar until smooth and fluffy, about 3 minutes. Beat in eggs one by one, followed by vanilla extract and applesauce On low speed beat in the flour mix. Fold in the chopped pear and chocolate chips with a spatula, and transfer batter to prepared tin. Even out the top and bake for about an hour until tester inserted into the centre of the loaf comes out clean. Let it cool in pan for ten minutes. 2 tablespoons sugar
One .25-ounce packet active dry yeast
4 cups all-purpose flour, plus more for dusting
1 teaspoon kosher salt
1/3 cup white chocolate chips
6 to 8 dried mission figs, chopped
6 dried pears, diced
Butter, for greasing the bowl

Steps:

  • Warm the milk in a saucepan on low heat to just warm. Stir in the sugar and yeast and set aside until bubbly and foamy, about 5 minutes.
  • Whisk together the flour and salt in a large bowl and create a well. Stir in the yeast mixture, and then knead the dough in the bowl until smooth, 4 to 5 minutes. Add the white chocolate chips, figs and pears and knead a bit more to evenly distribute. Place in a greased bowl, cover and set aside to rise until doubled in size, about 1 hour.
  • Preheat the oven to 350 degrees F.
  • Punch down the dough and lightly knead again. Turn into a greased 10-by-5-inch loaf pan. Allow to rise in the pan for 30 minutes more. 1 large orange, zest only
