  • Grease a 9-inch square baking dish with cooking spray.

1/4 teaspoon baking powder

1 cup flour
3/4 cup semi-sweet chocolate chips (I use Ghiradelli)
3/4 cup rolled oats (uncooked oatmeal)

Steps:

  • Preheat oven to 350 degrees with the rack in the middle position.
  • Melt the butter in a large microwave safe bowl.
  • Add the brown and white sugars and let cool a bit.
  • Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
  • Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
  • With a spatula spread dough evenly into a greased 8x8 baking pan.
  • Bake at 350 for 25- 30 minutes.
  • Cut into bars when cool.

1 cup white sugar
1 tablespoon vanilla (can use 1 tablespoon maple syrup or 2 teaspoons maple extract)

1 1/4 cups peanut butter
2 cups all-purpose flour
1 teaspoon baking soda
2 cups oatmeal (I use half quick cooking and regular oats)
2 cups semi-sweet chocolate chips

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch baking dish.
  • In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).

  • Add oats and continue mixing.
  • Add 1 cup chocolate chips until well blended.
  • With a large spoon, drop six large mounds into prepared baking pan.
  • Cut a piece of plastic wrap large enough to cover pan.
  • Place plastic wrap over mounds and press with your hand to spread the dough evenly; cover the entire pan with dough.
  • Remove plastic wrap.
  • Bake at 350° for 15-17 minutes or until light brown--Do not over bake.
  • Remove pan from oven and turn off oven.
  • Sprinkle the remaining 1 1/2 to 2 cups chocolate chips over the baked bars.

The recipe is originally from a land-o-lakes pamphlet. Part of prep time is cool time.

1 1/2 cups flour
1 cup quick oats
1 cup brown sugar, firmly packed
3/4 cup butter, softened
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk
1 (14 ounce) package caramels, unwrapped (48 caramels)
2 cups semi-sweet chocolate chips, divided
1 cup chopped pecans, divided

Steps:

  • Preheat oven to 350°F.
  • Combine all crumb ingredients in a large bowl, stopping after adding the salt. Beat at medium speed until mixture is crumbly (about 3 minutes). Reserve 1 cup of crumb mixture.
  • Press remaining crumb mixture into bottom of a 13x9 inch pan. Bake for 10 minutes.
  • Combine milk and caramels in a saucepan. Cook over medium low heat, stirring occasionally, until mixture is creamy.
  • Sprinkle partially baked crust with 1 cup chocolate chips and 1/2 cup chopped pecans.
  • Pour caramel mixture evenly over chips and nuts. Sprinkle evenly with reserved crumb mixture and pat lightly.
  • Bake for 18-22 minutes or until caramel is bubbly around the edges.
  • Cool completely. Melt the remaining cup of chocolate chips and spread over the top. Sprinkle with remaining nuts and pat lightly.
  • When chocolate hardens, cut into bars.

2/3 cup honey
1/2 cup coconut oil (no substitutes, this is what gives its creamy texture and flavor)
2 cups oats (not instant)
1 1/4 cups mini chocolate chips
3/4 cup dried cranberries

  • 1. In a medium sized saucepan, melt together peanut butter, honey and coconut oil. Remove from heat and add oats, chocolate chips and dried cranberries. Stir until combined and chocolate chips are melted.
  • 2. Spread into a 9x13 pan. Refrigerate until hardened, about an hour. Store in refrigerator.
  • 3. I use parchment in bottom of my pan so I can flip out of pan onto cutting board, cut, bag and freeze. This prevents me from eating it all at once!!
