Chocolate Chip Muffin Tops are what I like to call Muffin Cookies. They are scooped and baked like cookies but have the taste and texture of muffins. Light, fluffy and full of mini chocolate chips. These are perfect for brunch or dessert!

3 tbsp butter (softened)
1 cup granulated sugar
1 egg
2 cups flour
3 tsp baking powder
1/2 tsp salt
1 cup milk
3/4 cup mini chocolate chips

Steps:

  • Preheat oven to 400°.
  • Cream the butter and sugar together until well combined.
  • Add in the egg and mix thoroughly.
  • Add the flour, baking powder and salt. At this point, the 'batter' should resemble a packaged muffin mix. It will be very very dry.
  • Slowly add in the milk and mix until the batter is smooth.
  • Fold in the chocolate chips.
  • Using a cookie scoop, scoop the batter onto a parchment paper lined cookie sheet.
  • The muffin tops will spread, be sure to leave space on the pan for them to spread!
  • Bake at 400° for 10-12 minutes or until they bounce back when touched.
  • Cool for a few minutes before serving. Can be served hot or cold. Store in an airtight container.

Water, vegetable oil and egg called for on muffin tops box
3/4 cup finely chopped walnuts

Steps:

  • Heat oven to 400°F (375°F for dark or nonstick pan). Line large cookie sheet with cooking parchment paper; set aside.
  • In medium bowl, stir muffin tops mix, water, oil and egg just until blended (batter will be thick). Stir in 1/2 cup of the walnuts.
  • Drop batter by rounded tablespoonfuls about 2 inches apart onto lined cookie sheet. Bake 10 to 13 minutes or until edges are golden brown. Immediately remove from cookie sheet to cooling rack. Cool completely before drizzling.

1 1/2 c quick or old fashioned oatmeal, uncooked
1/2 c granulated sugar
1/3 c margarine or butter, melted-divided
1 1/3 c all purpose flour
1 Tbsp baking powder
1/4 c cocoa powder
2/3 c milk
1 tsp vanilla extract
1 large egg, lightly beaten
1/2 c mini chocolate chips
1/2 c chopped walnuts

Steps:

  • 1. Heat oven to 400^. Lightly grease a large cookie sheet. Set aside. Combine oats and sugar in a large bowl; mix up good. For streusel topping: Combine 1/4 cup oat mixture and 1 Tablespoon melted margarine in small bowl set aside. For Muffins: Add flour,baking powder and cocoa to remaining oat mixture; mix well. Combine milk,vanilla, remaining melted margarine and egg in a small bowl; mixing well. Add to dry ingredients; mix just until dry ingredients are moistened. Stir in nuts and chips. For each muffin top, drop batter by 1/4 cupfuls onto prepared cookie sheet. (use small cookie scoop). Sprinkle streusel topping evenly over batter, patting gently on.
