Time 20m

Number Of Ingredients 8

1 pkg 18.25oz. white cake mix
1 c all purpose flour
1 c quick cooking oats
1/2 c butter, melted
2 eggs
1 tsp vanilla extract
1 1/2 c coarsely chopped macadamia nuts
1 1/2 c semi sweet chocolate chunks or chips

Steps:

  • 1. In a large mixer bowl, combine cake mix, flour, oats, melted butter, eggs, and vanilla. Beat on low speed for 1 minute or just until smooth. Stir in nuts and chocolate chunks.
  • 2. Drop dough by rounded tablespoonfuls onto prepared sheets. Bake 10 to 15 minutes or until light golden. Cool 1 minute on wire racks or until firm on baking sheets then remove to racks and cool completely.

Tips:

  • Use room temperature ingredients. This will help the cookies spread and bake evenly.
  • Don't overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough before baking. This will help the cookies hold their shape.
  • Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before storing them. This will help them keep their shape and texture.

Conclusion:

These chocolate macadamia nut oatmeal cookies are a delicious and easy-to-make treat. They are perfect for breakfast, lunch, or a snack. The cookies are also a great way to use up leftover oatmeal. So next time you have some extra oatmeal, be sure to try this recipe!
